pickled beets

Does anyone eat pickled beets? i bought some fresh beets from my local farmers market and i wanted to try and make some. i know that it is ususally made w sugar but i was thinking about making it with splenda instead. any thoughts or recipes????

MMM fresh beets!  I love them roasted or steamed.  I'm pretty inexperienced when it comes to pickling anything, sorry no help there!

I would steam them, eat one warm and then chill the rest for salads.

Google the recipe and then use splenda instead of sugar.

I did weigh****chers oh, years ago and I started making pickled beets for their diet. This was way back when they required you to eat 5 fish meals a week and 1 meal of liver a week. Anyhow I just took a can of sliced or whole beets and added red wine vinegar and artificial sweetener (your choice) to taste and put them in a jar in the fridge and they were ready to go any time we wanted them. The whole family loves them and I still keep a jar in the fridge all the time It's probably best to let them set overnite .

I made some this weekend.  I made a vinagrette from apple cider vinegar, olive oil, sugar, salt, and pepper and used that to "pickle" the beets.  They were wonderful!

i make my own all the time. i use bragg's apple cider vinegar and stevia...however, i have not had the surgery yet and do not know if those two things are allowed. if they are...then try away cause it tastes great!
