Spaghetti Squash Alfredo (and food porn)

I did a bad, bad thing.

I served this dinner the other night. Ladled it on the divas plates. Watched them lap. It. UP. It got rave reviews. They went about their business of Xboxing and whatnot, singing the praises of the dinner.

They know spaghetti squash is not pasta...but what they didn't know was that they had just eaten not one, but THREE veggies in a meal with absolutely no starch.

I couldn't keep it to myself. I had to tell them. Messed up their entire world. I still don't think they are right.

Sounds like a fantastic meal. We love spaghetti squash and this will give us another way to use it. One quick question though....do you bake the squash before you make the casserole?
