What's your goal?
Every goal you mentioned is also on my list, except I am not vegan. I do however strive to eat as little meat as possible, and I don't eat red meat...rarely if ever now.
The blood sugar issue is a big goal for me. As long as I eat healthy carbs, fruits and veggies, and stay away from others, I do fine. My endocrinologist treats several bariatric patients who have had partial pancreas removal, so she said at this point I should be okay if I am able to control my blood sugar by my diet and stressed how important it is to do so.
Texas has been in an extended heat wave, and my walking regimen has suffered as a result. I just actually came in from my garage where my treadmill is and walked just under an hour. I love walking, and the weather is finally starting to cooperate. I need to walk everyday again.
Another goal I have is to become more informed about vitamins. I confess I rely on you and everyone else. I have not committed one thing to memory, other than I have to take them. That is pure laziness on my part, and that lack of knowledge does not allow me to help anyone else if the need arose. I am out of my league for sure on that one.
For me the numbers are important for several reasons. First - I think it is because I have lost literally hundreds of pounds in total on my own with my last diet ending with me weighing 18 pounds more than I do now. That was in 2004. As a result, after all that was required to qualify for surgery and the other health issues I had developed, losing down to the weight I am now and one that was my ideal in regards to fitness and personal satisfaction has been crucial, for me anyway.
My final goal is to keep the weight off and continue to live this healthy life that I have come to love. I'm 56 and never knew how delicious healthy food really is until now.

I've recently started doing one meatless day a week (just for myself).
Unfortunately, my entire family (husband and kids) are meatosauraus rexes. So I won't convert them.
I need to work on finding meatless foods high in protein, other than greek yogurt (which I eat a ton of daily) and tofu (BLEEEEECH).

They have these soy crumbles, which is like ground beef but really made from soy. I make chili with it and I made it for my mother and her husband but she told me not to tell him what it was made from because she thought he would refuse to eat it if he knew. So he was almost done with his first bowl of chili and suddenly looked at me, eating my chili, and said "Hey I thought you didn't eat meat." I said "I don't." He said "Well what is this?" So I told him and he thought about it for a minute, then got up and served himself a second bowl.
I've made it for my sister and her family too. Her kids still don't know it wasn't real meat. So I bet your family would eat that. It varies from product to product but some of the meat substitutes are very high in protein. I use these veggie Italian sausages in some some meals that have 20 grams protein in one sausage. It's a pretty good sized sausage, but that's still a lot of protein.
Will your family eat beans? What about something like vegatarian lasagna? You could just eat the filling, not the noodles. I make mine with a mixture of ricotta cheese, cottage cheese and mozzerella cheese, along with whatever veggies I want, and I stir some unflavored protein powder into my cheese mixture to give it more protein. Can't taste the protein powder at all. I don't even tell my partner it's in there because he thinks he doesn't like protein powder. But he can't taste it in there.
What about doing something like build your own taco night or build your own pizza night (use tortilla shells for the pizza crust). You could have taco meat for the rest of the family, or use the soy crumbles with taco seasoning, and then have black beans or refried beans, cheese, tomatoes, lettuce salsa, etc and everyone put their own tacos together. Or to do the pizzas, have sauce, cheese and a bunch of toppings (you can put beans on a veggie pizza, or you can buy veggie pepperoni - my cats love the veggie pepperoni) and then it only takes a few minutes to bake the pizzas.

- wear form fitting clothing without worrying about my back saddles or tummy bulging
- be able to see muscle definition
- Fit into single digit sized clothing for the first time in 25 years
- eat an apple without feeling guilty
- ultimate goal to look descent wearing a bikini
Got only a few more pounds on the scale, but to accomplish these goals it will take a lot more work than losing those.
-I would like to buy clothes off the rack and not at the Casual Male or Big and Tall.
-I would like to sit at a concert-sports-airplane seat without keeping my arms crossed for the duration as not to disturb the person next to me.
- I would like to run without feeling like my ankles are being crushed.
-and (I apologize for this one) I would like to look straight down and see my "junk" without the use of a mirror
