Corned Beef Hash a la Nik

I used to love to eat that stuff! God help me, it looked like dog food coming out of the can but if you fried it up and put a fried egg on top...oh my YUM!

Well I can't do that anymore. Firstly, not good for me. Second...can you say SALT??? Third, fatty foods + Nik's pouch = not friends.

But I was craving some the other day. Here's how I tweaked it and got the great taste I remember without all that other pesky stuff:

Well thank goodness! I thought my post ended up in OH's underbelly. I've been there. Not pleasant.
