What's for dinner - Wednesday!

I haven't asked in a while. 

For me, it's whatever those lovely old ladies feed me. The good news for me is that I've had all of about 550 calories yet today so I have plenty of wiggle room.

Here's what else I had today:

1. Two scrambled eggs w/ cheese and salsa and a slice of wheat toast
2. Two cheese sticks
3. Almond delight protein puffs (Kay's Naturals - BF review forthcoming!)

So what's on your plate today?

Chili!  Its cold today (finally) and so Im having some warm chili with cheese on top, yum.

I had some oven roasted deli turkey and mashed potoatos and gravey :) not very much os either but it was very good.

I have Sour Cream Salsa Chicken in the crock pot. I'll serve it with rice, green beans and a salad.

Today I had a grilled cheese sandwich for breakfast, a string cheese and lunchmeat for lunch and some grapes. I need to get a protein shake in before dinner.

Crock pot Cream Cheese Chicken over rice...yum! i got the recipe on here a while back and just now made it for the first time! highly recommend it!!!!

You put chicken in the crock pot, add 1 packet of taco seasoning and a cup of salsa. Let it cook on low for 6 hours then take the chicken out and add 1/4 cup of sour cream (or cream cheese) and some cornstarch to thicken the sauce. It is super easy and tastes like heaven. I usually use cream cheese in mine rather than sour cream. I also skip the rice and put the sauce over steamed cauliflower.

 Dinner was homemade cream of shrimp soup (small amount of flour to make a roux, add in chicken stock, milk, tiny dab of bacon fat, and shrimp - stir with hand blender) and some toasted walnuts.
Other eats were eggbeaters with cheese & ham, organic chicken thighs in greek seasoning, homemade kale chips and a protein latte.
