questions about soy milk

For those that are lactose intolerant or use soy milk for whatever reasons, I have a couple questions.  I have tried soy milk in the past but it was a long time ago and all I can remember is that I didn't like it very much.  But I think that was because I was expecting it to taste like regular milk and of course it didn't.  But anyway, can you use it in recipes like you would regular milk?  Like, if I bake with it will my muffins come out the same as if I used regular milk?  Can I make sugar free pudding with it?

I am trying to cut back on the amount of dairy I consume and trying to figure out what I'm going to eat instead.

Oh, and anyone try the soy yogurt?

 I have never baked with it, I hate the stuff, but my BF is a vegan so he loves it.  If you don't like soy milk you will HATE the yogurt.  It has an odd taste to me.

I have used almond milk, which I think takes WAY more like real milk, to make things.  I don't bake as I am not far out enough to eat baked good.  But I do use it to make sauces or add to soups and it is great.  

I don't like the soy milk that has flavor, I don't like my milk to taste like vanilla. 

Have you ever tried the almond milk?  Low in calories too, really low.

I've never tried almond milk, but it sounds like a lot of people prefer it to soy milk.  I will try it.

What does your boyfriend rely on for protein, other than beans?  Does he do a lot of tofu?  I really want to cut back on my dairy but I currenly rely on dairy for a fair amount of my protein.

I'm allergic to soy so I don't drink it. I do know that pudding won't set up right if made with soy or almond milk, it says on the package not to use it.
I know it can be used for cooking and baking just not sure of the conversions or how it works.
I've heard the yogurt is good but the sugars may be high.

Love the unsweetened almond Milk. I get the blue diamond brand at shoprite. My hubby likes Silk Soy Milk.  The almond milk is good, tastes a lot like regular milk in fact its even a little richer than the normal fat-free milk I was drinking. Very low calories. Yummy.

I've never baked with it but I have used in in just about every other place I use milk.  In my experience, I don't really notice a difference.  I imagine baking with it would give similar results, although I suppose it depends on what you are baking.

The only s/f pudding that I could ever get to set fairly normally was the chocolate fudge flavor.  Every thing else would be runny (same with using Almond Milk).

While I like both soy milk and Almond milk (although the pouch no longer likes Almond), the soy yogurt I tried was AWFUL.  I hate to waste food, so after I couldn't eat it normally, I mixed the stuff with some yummy protein powder and made little freezer bites, but even those were disgusting.  In the tra**** went.

I use soy, the almond and the reduced calorie cocunut milk (in the dairy cae not on the shelf),  of all i like the cocunut the best.  Never tried to bake with them,  pudding is not so good with them tastes ok just runny.

I've used both almond and soy milk. I definitely prefer soy. I don't like the vanilla flavored. I usually get the plain and can use it for everything, except puddings. I use lactaid for pudding. You can bake with it, put it in savory dishes, mashed potatoes, etc. I haven't used it since my surgery, but I was lactose intolerant before, so I am pretty used to it by now. I like the 8th Continent brand and Kroger brand. Silk is a little too thick and rich for me. I like it the consistency of a 2% milk, so the other brands work better for me.

Soy yogurt is nasty stuff!

I'm sorry to hear most people seem to not like the yogurt.  I love yogurt and eat a ton of it.

I am not lactose intolerant but my issue is with the way dairy cows are typically treated.  I just don't want to use my money to support that anymore.  I recently found a local farmer I can buy eggs from and his chickens are cage free, they are raised the way you would think chickens would be.  But I have not found anyone to buy milk from and even if I did, I really don't wanna make my own yogurt.  Sounds like too much work for me.  So I'm still working out what I'm going to do, but I am at least going to cut way back on my dairy.
