Anniversary Dessert! and pancakes too!

 I am planning a special day/meal for out one year wedding anniversary on Sunday. I would love to hear dessert ideas! And if you have tried any desserts you like from any blogs please let me know how they were and what they are! Maybe I will make chocolate covered strawberries? Or I saw a recipe on bariatric foodie for butterscotch bundt cake that looked good. But I would love suggestions!

Also my hubby requested pancakes this weekend sometime. I'm not sure I want to make them unless I find some really really good options. So if you have any recipes or reviews of pancakes that aren't that bad for us please let me know!

 Angle food cake is low in sugar and fat.  You can have that with some berries soaked with Splenda.

Pancakes....I would go out to breakfast and let him order those.  If he wants you to make them then I would make them for him and you eat something else.  I don't think there is a way to make pancakes healthy.  You could eat them if you want, just as a treat.

You don't always have to eat the same thing.  My honey is a vegetarian and has been for 20 years.  We never eat the same thing!  LOL

I found this recipe on a Dukan (low carb) website.  I haven't tried it yet but I have tried other recipes from there and they come out good.

1/2 tsp cinnamon 1 egg 3 tbsp oat bran 2 tbsp sweetner (optional) 2 tbsp low fat vanilla  yogurt (or you can use greek yogurt flavored with sugar free vanilla syrup)   1. Whisk the egg and then slowly whisk in the vanilla yogurt. 2. Stir in the sweetner, cinnamon and oat bran. 3. Use some spray oil to heat up a frying pan and pour the mixture in, cooking for a couple of minutes on each side until brown.

You could top this with some sugar free maple syrup or fruit or whatever sounds good.

I make pancakes for my hubby and son all the time.  When I have about 1T of batter left, I add 1/2scoop of protein powder, a little silk unsweetened soy milk and maybe a tablespoon of ground flax.  Mix well and cook as a pancake for me.  I use promise fat free oleo and SF jelly on it.

Last year around Christmas, I made a great chocolate trifle with SF chocolate pudding, SF cheesecake pudding, SF devils food cake, SF syurp, etc.  It serves a huge crowd so you may not want something that size for 2 of you.  I also did the pumpkin cheesecake and it came out great.

A WLS friend makes something similar to that.  She uses a whole grain pancake mix and adds protein powder in it.  Then she uses SF maple syrup.  I haven't tried them yet as gummy, soft breads still get stuck for me, but she is over a year out.
