favorite SIMPLE chicken meals?

Lately I am getting really tired of the same old chicken dishes and I need some ideas for SIMPLE ways of using chicken (or turkey).  I have time to cook, so it doesn't have to be a fast preparation, but I don't want anything with 50 ingredients (since I am single, I have found that I end up wasting a lot of food if I make dishes that require lots of different fresh ingredients). 

I already do a lot of versions of marinated, grilled chicken because those things stay fresh quite a while if I vacuum seal them.  The only food flavors that I really don't care for at all are middle eastern.

I think NIK was the one who said to marinate chicken in plain Greek yogurt. That is the best tip I have gotten since surgery food wise. I do that then rinse it off add some McCormick Perfect Pinch Rotisserie Chicken seasoning and then bake it !! So good in my opinion.

hhhhhmmmm, I may try this but instead marinate the chicken in low-fat, or fat free italian dressing then add the Rotisserie seasoning.

Well take some frozen chix breast and put them in a crock pot..try 4 of them. Then put a can of cr. of chix soup, a package of lipton onion soup mix, sour cream and mix it all together. Put it over your chicken and cook it for 6 - 8 hours on low. Of course you can do this as quick or slow as you want but if you can slow cook it its so tender. Normally you put it over noodles or rice. But it doesn't have to its good in this gravy. Its called Chicken stroganoff. Use fat free cr. of chix soup, and sour cream to make it almost fat free.

I've had this recipe for Crockpot Curry Chicken saved for when I am ready for chicken. It's only got a few ingredients and sounds tasty and moist.

I often don't bother cooking meat from raw. My local store has a healthy sliced grilled chicken option that works easy for me. I also pre-prepare sauces or ingredients in ice cube trays to use them for my teeny meals. (I have cubes of homemade pesto, of cooked quinoa, of low fat low sodium cream of chicken soup, as an example. I might sautee mushrooms and onions with thyme until soft and then throw in a three ounces of chicken and a couple of cubes of cream of chicken soup. I might thaw a couple of cubes of quinoa and a couple of tablespoons of a low fat alfredo in was some steamed broccoli and a few ounces of chicken. I might coat the pieces of chicken in Frank's hot buffalo wing sauce, broil and eat with salad. Sometimes I make cold salads with it.... roasted red peppers, artichoke hearts, chick peas and chicken with some herbs and spices...there are lots of lovely recipes like that.

I'm like you, NOW I rarely buy raw meat...sometimes I go to the freezer section in get a bag of grilled chicken tenders or strips and use those in my chicken broth or a salad.

I did buy a bag of lemon pepper chicken breast and love it so much I'm going to continue buying it! It's so many dishes you can use it in.

Well, I guess my curry chicken soup is out, but I'm itching to make
my mini pumpkins with chicken and veggies.  I cut off the tops, scoop
the seeds and put chicken, zucchini, apple and broth inside with a dash
of wild rice, cinnamon, garlic, pepper and basil.  Then I roast em.  YUM. It makes a
really yummy chicken stew and it looks incredibly Fall hearty meal-y.  It's
equally good with any seasoning if you don't care for cinnamon.

I layer torn corn tortillas, ff cream of chicken soup mixed with salsa, olives,
green chiles, cumin or Mexican spice and cubed chicken, lowfat cheese-
layer it all up and heat in oven. YUM!  Amazing chicken enchilada casserole.
If the chicken is already cooked, it's dinner in about 20 minutes. You can also
heat it in the microwave cuz everything's already cooked. Looks messy but
this vanishes in 10 minutes at any potluck.  Top with ff sour cream or guacamole.

Chicken taco salad- lettuce, black beans, a few nacho doritos crushed, olives,
green peppers cubed chicken, salsa, lf shredded cheese.  Mix it all up and top
with ff sour cream or avocado slices if you like.  You can also mix the salsa with
either ff ranch or thousand dressing.  This is another potluck fave.

I also layer sliced or cubed zucchinis with chicken, tomato or spaghetti sauce
and lf cheese. Bake and it's a zucchini casserole that tastes like pizza. You
can toss in a can of any beans to up the protein in every bite.

Lastly, cubed chicken, cubes or slices of eggplant, squash, sweet potato, tomato,
greek olives, artichoke hearts and garlic- spray lightly with olive oil, sprinkle with
light feta cheese and bake. (Use your fave veggies). 

I use cooked chicken in all these and dinner's ready in half an hour or less.

I like to make a packet out of foil with a chicken breast and whatever vegetables I have handy and seal it up and bake it, about 350 for about 15 minutes or so.  Quick and easy dinner.

Mix 1/2 cup of parmesan cheese and a packet of good seasoning mix.
Wet chicken with water or milk and dredge in cheese mix and place on greased pan.
Bake350 for 30 min...
