What's for dinner - Tuesday!

How about a big heaping bowl of FRUSTRATION!

That's what I know I'm in for with school supply shopping. Sigh. And so it begins.

Other than that, I think I'm making chicken alfredo.

Here's what else I've had today:

1. Blue plate special - 2 eggs, 2 pieces of turkey bacon, 1 slice of double fiber wheat toast
2. Spicy black beans with brown rice, Fiber One Brownie
3. An apple

Aren't I just the carb monster today? I do notice, however, that fiber really does help regulate appetite. I haven't gotten hungry between planned feedings.

 Today I went to kfc/taco bell for lunch so I've been eating grilled chicken and corn on the cob. For dinner I'm going to have the inside of a burrito. I also just got my three da vinci syrups delivered just now so I'm excited to have a shake! Not sure which one I will have! I got english toffee, pumpkin pie, and cinnamon sugar!

I have never tried the brownies or the actual whole muffins but I do the Vita Tops..you know just the muffin top?  The chocoloate chocolate chip was too fudgy for me.  But I really like the banana nut and one that I can't remember exactly what they call it but its very fiber dense and it has cranberries in it.

I like to have them for breakfast with a serving of PB2 on top.  The banana nut and the chocolate are quite good that way.  Actually it was the only way I could eat the chocolate.  I have been out of PB2 since I got the cranberry ones but I am not sure how that would go anyway. 

They are pretty expensive but I indulge myself with a box once a month or every other month.

Baked talapia with lemon, carrots and some sort of bean. 

Carrots are mostly for my DH.  And most of the beans for that matter.

 Roasted pork loin (crock pot), corn and black bean salad with lime and cilantro, and an eggplant dish (fresh from my garden) sauteed with onion, garlic, capers, tomato paste, olive oil, asiago cheese and garlic stuffed olives. YUM!!

Smoky Stuffed Peppers. SO GOOD. (It's a little carb-y, but uses a lot of summer veggies.)
