What do you use as a substitute for FRYING
I avoid all wheat products but one of the best chicken dishes I made was when I took some light popcorn and put it in the blender to make crumbs and used that as a coating on my chicken after i put it in egg. I baked it like I normally would and it was delicious. The buttery flavor really made it tasty. I first made this over 25 years ago and when I first started hearing about popcorn chicken I thought someone had stolen my recipe.
