What do you use as a substitute for FRYING

I avoid all wheat products but one of the best chicken dishes I made was when I took some light popcorn and put it in the blender to make crumbs and used that as a coating on my chicken after i put it in egg.  I baked it like I normally would and it was delicious.  The buttery flavor really made it tasty.  I first made this over 25 years ago and when I first started hearing about popcorn chicken I thought someone had stolen my recipe.

I crush up fiber one cereal and add spices to it depending on the mood. Dip your meat in egg beaters them dredge thru the fiber one and bake.  You can use it on veggies (perfect onion rings) or even light string cheese.
