What's for dinner - Tuesday!!!

For once i actually know. Ain't THAT something!!!

I am having what I had yesterday: Mexican sausage and peppers. Recipe forthcoming on Bariatric Foodie once I snap a pic tonight. So yummy and SO simple! Later on I might have a Kahlua and Scream protein shake!

Here's what I've had today:

1. A less than stellar protein enhanced egg/bacon sandwich: 1 slice P28 bread (nope...still don't like it) with a fried egg and two slices of turkey bacon. I ate it because I knew I wouldn't have an opportunity to eat anything else for many hours.

2. An Asian Chicken salad from the hospital cafeteria across the street: mixed field greens, cukes, carrots, tomato, green peppers, red onions, mandarin oranges, a light sprinkle of chopped peanuts and some grilled chicken with 2 tbsp (yes I do bring my own tablespoon) of Asian Sesame dressing. It was a gorgeous salad to look at!

So what's on YOUR plate today?

Breakfast- Protein Bread with Ham and Cheese
Lunch- Beef Stew with Yellow Plantains and rice

Dinner- Stuffed Mexican Zucchini (Stuffed with Ground Turkey, onions, peppers and tomatoes with cheese on top)-- I am really excited about this one! :)

The stuffed zucchini looks good. I have done stuffed peppers before, but not zucchini.

I love stuffed peppers, but last week at the Farmers Market they had this round shaped zuchinni squash and the vendor suggested scooping the insides out and mixing it with stufing. I'll let you know how they turn out. The pic I got from google :)

I tried (real hard) to like greek yogurt. I got the Fage 0% and mixed in the sugar-free cheesecake pudding mix. I am not sure if it was the texture or the taste, but it took me forever to eat it. I kept thinking "this is gross!"

For lunch I had a greek salad (now that I write it, I see a trend!), then I had a chocolate quest bar. This was my second attempt with quest. The berry fruit bar was like heavy cardboard w/ old, dried fruit. The chocolate bar was better, but really heavy.

For dinner I ate two brats and a couple of pita chips.

Finally, I had a handful of Jordan Almonds...my weakness. I shouldn't have bought them but they called to me and I threw them in that cart. I must now pitch the rest in the trash.

My stomach is full to my neck. So there will be nothing passing through my lips, unless I can't keep the junk down. Tomorrow I will do better. I am not going to get to my goal if I keep up with the night eating.

I use Greek Yogurt as a marinade (Like for chicken tika masala or tandori chicken) and as a base for sauces like Tzatziki sauce. I also use it as a replacement for sour cream in things like chili or tacos/burritos and tostadas, or baked potatoes. I am not a big fan of it otherwise.

Today was my first attempt at plain Greek yogurt.  Needless to say I needed a sweet-n-low mixed in.  I have 2 questions for ya:

1. what is tzatziki sauce?  that is the 2nd time today I've heard of it.
2. Where did you get that zucchini recipe??

Tzatziki is a Greek Cucumber/Yogurt Sauce. It has cucumbers, white pepper, salt, dill weed, and greek yogurt. Some people add a little bit of garlic. I also like to add a bit of lemon juice (some peeps add vinegar). It's very refreshing and tasty.

The Zucchini recipe, the dude at the veggie stand gave me the idea, but I came up with how to make it myself. Let me try and write it all down and I will post it here when I have it. :)

I know it is so healthy and so good for you. I may have to try to make Tzatziki sauce to see if I can make it taste palatable. It is a bit too tangy, even with the sweet pudding mix mixed into it.
