Give me your chicken salad recipes
Chicken (she uses canned breast, I have used a whole boiled chicken) chop very small or in a food processor
Boiled eggs chopped
Chopped celery
Ranch powdered dip mix (taste test as to how much you like in flavor, you can add more (I used little over half the pkg)
Half mayo/half Miracle Whip salad dressing
Pepper to taste
Mix all together and refrigerate 4 hours.
You can add chopped apples, pecans, raisins if you like and can tolerate.
You are early out and may want to use reduced fat may/salad dressing in case you dump on fat.

I buy the rotissierie chicken and shred it. I freeze the meat in bags, either one or two cups by volume.
FIRST OFF - I DO NOT DUMP - THIS CHICKEN SALAD HAS FRUIT SUGARS.
I don't measure much either so this is approximate.
Put one cup of chicken in a bowl and sprinkle with poultry seasoning, a little kosher salt, and a little fresh ground pepper. Chop up about 4 green onions. Chop up half a dozen green grapes (IF YOU CAN HANDLE THEM **). Chop up a couple of tablespoons of dried cranberries (i chop these small so a little can go a long ways). Chop up a 1/4 cup of pecans. Add it all to the bowl. If you want you can add a couple of tablespoons of diced red bell pepper. Then add up to 1/3 of a cup of mayo. Mix it up and let it sit overnight.
As far out as I am I can eat about 1/2 cup of this wrapped in 1/2 a flat-out. It's really good and this will make about 2 cups.
** The grapes add moisture but I hear skins can be a problem for some folks.

1-2 tbspn low fat ranch salad dressing OR plain yogurt and a sprinkle of Ranch dressing mix

1 c pico de gallo (I buy fresh at my grocery store)
1/2 c canned black beans rinsed & drained
1/2 an avocado diced
splash of lemon or lime juice
salt & pepper to taste
Chopped red onion
Finely chopped celery
Chopped pecans
Mayonnaise
Salt & Pepper
I use all ingredients to taste.. everything is extremely finely chopped and the chicken is into small chunks. I've always gotten really great compliments on my chicken salad.. yum!
