On a lighter note...I need some cheese assistance...

The story of my life is that, to me, everything IS a story. So lemme tell you a story. ;)

 

The divas and I have been doing what I call “cheese of the paycheck." We realized we aren’t well schooled in cheeses and are seeking to rectify that by trying one or two new cheeses each paycheck. This paycheck we went to Trader Joe’s and I let them pick out cheeses.

 

The younger one picked out crumbly Gorgonzola. The older one picked Bre (bree?).

 

I’d tasted bre before but didn’t remember the taste of it. But in my head I automatically thought I did not like it.  When I tried it, I was right. I am firmly on the side of stinky cheeses – asiago, parmesan, feta, etc. Bre is buttery and mild and has this…something…that I’m not fond of. The divas don’t care for it much either.


But one rule of “cheese of the paycheck" is that we have to fini**** We can’t afford to go around buying cheeses and chucking them.


So help me figure out what to do with this cheese! Can I combine it with some other cheese to make it yummy? I’ve searched recipes and nothing is inspiring me so far.

 

The crumbly Gorgonzola went over well. It is way salty though. So I figured out a solution. I thought to myself it MUST be salty for a reason then it came to me. FRUIT! One whole wheat cracker + a dab of sugar-free apricot preserves + crumbly Gorgonzola = PURE YUMMINESS!

 

Now to figure out that other cheese…help!

I love bree.  Usually though I'll melt it (in the oven) and add a sugar free jelly to the top and eat it with crackers (oops) or raw veggies.

Not sure if this helps or not.

Mmmmmm, Brie. The jelly idea is a good one--raspberry is particularly good. It is also delish warmed with some honey and sliced almonds on it served with fruit and crackers.

Last and most decadent--top it with the preserves or honey, wrap the round with crescent dough and bake it until the dough is light brown. It is delish served with French bread or good crackers. Also could do it on apple slices.

Not the most calorie friendly suggestions but will taste good!!

I take sliced deli turkey, put a small slice of brie on it with either herbs de provence or lavender and bake it until the brie melts. I then roll it up and eat it. Yummy! On occassion, I've drizzled a little honey into the rolls in addition. It's delightful!

For gorgonzola, I slice a steak thin, slice some onions and mushrooms up, cook them in beef broth and crumble the gorgonzola on top. It's awesome. I've done this with chicken too.

 Brie works well with Asparagus. I love doing different types of quiches, so I would do a Brie and Asparagus Quiche with it.

 Don't give up on the Brie!! there are so many different kinds.. some are gross to me others are OMG DELISH I COULD EAT THE ENTIRE WEDGE!!  As for what to do with it, I"m no help I just like to pile it on crackers or veggies!

I absolutely LOVE Brie.. on some crackers or with some SF jam and those bougeious (sp) round tea crackers as folks call them...
you can also bake it and use it as a bowl... with veggies...

We love bree. Turkey, bree and cucumber sandwiches. Bree, crackers and SF jam. it actually doesn't do bad on homemade flat out flat bread pizzas either. Same with the gargonzola (chicken, garlic sauce, gargonzola, even a little bit of your favorite nuts and pears/apples).
