What's for dinner - Monday!
I dunno but I izz HONGRY! The divas are gone which means bachelorette eating. I have an intense craving for cottage cheese. That isn't dinner though. For it to qualify as dinner (in my mind) there must be meat involved!
Anyhoo, here's the rest of my day. Surprisingly un-carby for a change:
1. Steak and Cheese Egg Scramble with onions, peppers and mushrooms
2. A big scoop of buffalo chicken dip on a green salad

We'll start with a homemade bruschetta (tomato, red onion, fresh basil, and a white balsamic vinaigrette) on classic Melba toast. We typically use a fresh baguette that we slice thin and toast in the oven, but since we have so many boxes of Melba toast, we're cleaning house. :)
Then we'll move onto hamburgers with sauteed onions and melted blue cheese (laughing cow version) on top. We get the ground sirloin from a small local market that sells great quality meats. The rest of the family will then put Peter Luger steak sauce over the burger as a condiment. I'll skip the sauce and the toasted whole wheat bun.
The burger will be accompanied by gorgeous bi-colored (yellow and white) corn on the cob that we picked up at a farmers market in west Jersey on our way home from PA on Sunday. Of course, I'll only eat one teaspoon of the bruschetta and half of a burger, but that is what is on the menu for the rest of the family.

Dinner was Jenns MexiCali meatloaf off of Bariatric foodie...I have NONE left...everyone ate it all.
