Have a good meatloaf recipe?
I made mexican meatloaf the other night and it was a HUGE hit. I had bought some mango salsa from costco and used some of that in it and boy oh boy!
This coming week I want to try "pizza" meatloaf that I saw on the eggface blog. Look divine!
I now make ours in a cupcake tin- it's the right size and the kids think it's pretty "neat". They have been telling me that the food we've been eating is better than a restaurant, so... WIN for Mommy!!

I make this one many times pre-op and once post-op. My family loves it. I buy the reduced sugar ketchup though. It's healthy and love the using muffin tins. Makes it easier to freeze left overs.

My husband is super picky and said meatloaf was so gross then I made it for him when we first got married (4 years ago) and now he loves it. All I do is take hamburger, crushed saltine crackers and chopped onions make it into a meatloaf let it cook til done then add ketchup on top. So delicious and easy :)
Meatloaf mix (beef, pork & veal), italian bread crumbs (which can be substituted by crushed chicharrones or crushed up CocoPop to reduce carbs), onion, green peper, worchestershire sauce, ketchup (can be sugar free or low carb bbq sauce), garlic powder, splash of mustard, egg. Most importantly, I mix by hand for good consistancy.... some people are squeemish about mixing meat by hand but you run the risk of overmix in a food processer and make the consistency like cat food instead of meatloaf.....

I had meatloaf last night and it was a wonderful change. I make mine with extremely finely diced onion and green pepper, 2 slices of while wheat bread shredded, Worcester sauce and a good bit of Sweet Baby Ray's BBQ sauce. I limited myself to one portion and it was perfect. The pouch enjoyed every bite.
