Well I had a protein shake around 5:30pm. As I was trying to figure out what to make, NIK you popped into my head. I realized I had 3 dozen eggs, SMH (dh has OCD- for real), some turkey sausage and a few other things. In less than 5 minutes I had a fritata (sp)popped in the oven. Dh and the kids CHOWED it. Well, I thought I would take a small bite to taste it. Nope, my prissy pouch was pissed!! So now I am sitting here with a brick in my stomach from a small fork full. UGH. I only had a 1/4 cup of Mexican cheese and would have liked to added more but dh said he really liked it as is.
A shredded beef tamale...it was yum.
Today is post-call for me, which tend to not me good eating days because I sleep or run errands. Consequently, I will be having a protein shake before bed to bump up my calories/protein for today. But, I did get my PB2 shipment today so I see something choco-peanut buttery in my future.
