What's for dinner - Manic Monday!

Today has been BUSY! Good Lordy!

I won't bore you with the details.

Dinner tonight...STEAK! I couldn't eat steak for the longest but I sat, thought about it and figured out a way to prepare it wherein my pouch does NOT ***** slap me! I chronicled this wondrous breakthrough and it will appear on Bariatric Foodie sometime this week.

I'm also assembling a lasagna tonight. A co-worker just had twins and she could use a good, home cooked meal. I'm going to help out with some household chores and will bring the lasagna then. The significant part of this is that because it is for her and not me, I used whole milk ricotta for the first time in my life. DAMMIT! I don't know that I can go back to part skim now. Urgh.

Anyway, here's what I've had today:

1. Protein PB oatmeal
2. 6 inch subway turkey breast and ham sub with veggies and light mayo (yes, I can eat the whole sub)

hello all, getting ready for zumba. i am not going to walk this week due to the heat and it causing my wonderful epilepsy medicines to deplete. yes, causing partial seizures. they suck. so just the 2 days of zumba and my normal work week. here are my eats for today. have a wonderful day!

I am slow cooking a chicken in the crock pot.  Seems to be the only way I can eat chicken at 5 weeks post op.   It always turns out so moist and flavorful.  I make a spicy rub for the chicken, and slow cook it all day.  I am also roasting some veggies in the oven,  sweet potatoes, onions, red bell pepper, cauliflower and broccoli with olive oil, salt, pepper and thyme.  Yummy!!!

Tonight will be pork chops and veggies.  YUM!  I am going to try to prepare it in a saute pan with some kind of cream of whatever soup... Not sure yet.

I'll be making a fillet mignon wrapped in bacon that I found at Costco yesterday (my first time there). I'll be searing it in a cast iron pan and finishing it in the oven (it's raining, so no grill).  My wife and I also found some fresh lobster ravioli in Costco, so I'm making her the ravioli in a lump crab meat alfredo sauce.

If only I was far enough along to be able to drink a small glass of Seven Deadly Zins with my steak. My wife will get to enjoy a nice glass of Riesling with her ravioli. Oh well, at least I have something to look forward to this time next year.

Dinner:
fresh - home made salsa, a few chips, cheese and guacamole.
Not really protein rich food - but I really crave that,
Had a lot of proteins already today.  will be fine.
