Chili and variations on that theme....

I make a lot so we'll have tons of leftovers.

In a big crockpot:

2 lbs of ground turkey
2 cans of your favorite beans (I like black or red kidney)
1 large can stewed whole tomatoes (rip them up a bit) with the juice (if you like a redder chili you can add 1-2 small cans of tomato paste)
20 cloves garlic
3 onions chopped
3 ribs of celery chopped
3 large carrots chopped
2 tbsp chili powder and salt to taste
or an envelope of mix

Really nutritious, full of fiber and very little fat. It won't look like beef chili (kind of pale) but still delicious.

Easiest - wash a whole chicken and take out the giblets.  Dry it off and stick it in the crock pot.  Season if you want but it will be fine either way.  Put the lid on and turn it on, 8 hrs or so.

Next - use a pack of frozen thighs, boneless, skinless.  Put them in the crock pot and cover with a can of golden mushroom soup.  Cook on low all day or on high for around 4-5 hrs.\

Another - put a pack of boneless, skinless thighs in the crockpot.  Add 1 can of rinsed black beans, 1 can of drained corn, 1 jar of salsa.  Cook as above.

3 lb. bag of boneless/skinless chicken breasts thrown in the crock pot w/ a jar of salsa.  Cook all day on low.  Remove some of the excess liquid.  Toss a brick of reduced fat cream cheese on top and let it cook for another 30-45 minutes ****il the cream cheese melts a bit).  Stir and the chicken will fall apart.  You can use the yummy shredded chicken for tacos, salads, wraps, sandwiches or to eat just plain.  I love to package it in individual servings and then just heat it up w/ some black beans and hot sauce and eat that for lunch.

Chili is another fav but I don't have a recipe.  I just throw a whole bunch of whatever in the crock pot and it always turns out great.  I prefer black beans when I make my chili.

I made this pre-op. Haven't tried it post-op yet. I need to find a low sugar applebutter.

Apple butter pork

Ingredients

  • 2 (2 pound) boneless pork loin roast
  • seasoning salt to taste
  • 2 cups apple juice
  • 1/2 cup apple butter
  • 1/4 cup brown sugar
  • 2 tablespoons water
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
Throw in crockpot. Let cook for several hours.

Also I would probably do something instead of the brown sugar.

My hubby and i actually just made this one.
1 pork loin
carrots
celery
potatos

Season to taste we used some mrs dash and a little garlic and pepper. Not much!! I am still not doing well with seasonings.
Throw it all in the crock pot and cook for several hours. The meat was so moist it just feel apart!!

I ate on this all week long for lunches at work and dinner at home. If I had not made me some individual meals before everyone else got to it I would not have had it all week!!!!

Here's one that my wife has used for a long time.  It is quick and easy too.

Butter Beef:

2-3 pounds stew beef
2 pouches of lipton onion soup mix
3/4 stick of butter (cut up)
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1 cup water.

Pour water in crock pot.  Put in 1/3 of the meat and 1/3 of all the other ingredients.  Keep layering with the top layer being the last of the butter.  Cook for 6-8 hours stirring every 1/2 way through time (if you can).

You can also do this with chicken thighs or pork chops too.
