What's for dinner - Tuesday!!!!!

It's not really that exciting, is it? No? Ah well...

Anyway. I am HUNGRY for some reason. I dunno why. I'm hoping dinner tonight will be better than last night. Got stranded somewhere where the only thing around was a Burger King. Got a burger, took off the bun but still...blech! I felt gross. Me no likey burgers anymore. Or grease. I like the IDEA of a burger. It just never ends well with me.

Anyhoo...tonight I have no clue what I'm eating. I have already used up my two servings of starch for the day which blows up my initial plan of a high fiber chicken quesadilla. I might go with my old default...scrambled eggs of some sort.

Heads up: tonight I am testing out a low-carb/high protein recipe for zucchini bread. If it turns out any good I'll share it on Bariatric Foodie.

Second day of iron infusions..  Survived, but now my right arm is all bruised and "unhappy". "Angry vein, very angry"  my male nurse told me once he took the needle out of it.  Told me to "treat it gently, warm water compress". I guess tomorrow they will stick me again, and he told me that  he will not be leaving it for Thursday". "you veins do not like the needle". no kidding.

as for dinner, I am hungry - but like yesterday - once i eat I will be in pain.  Did not know that iron infusion may cause stomach pains.  One of the side effects.   But as long as the infusion help me at the end - all is good. 

so - food again - not sure... I eat solids (meat of any kind) - I will hurt a lot, less solids (yogurt, soups, etc.), hurt less but I will be hungry more... what to do? what to do? (BTW even protein shake causes cramps...). O well.

Chicken taco meat- (boneless skinless chicken breast with taco seasoning sprinkled over the top along with a little water, then cooked in the crock pot)

A few green beans- chicken really fills me up, so I don't eat any of the shell or anything along with the taco meat. This is one of my favorite meals! Yummy!

Spicy low-carb chicken quesadillas dipped in spicy salsa.  I use the La Tortilla Factory low carb tortillas, canned white meat chicken which I season with some cumin, chili, and very spicy ground chipotle chili pepper. Then I use reduced fat 4 cheese Mexican shredded cheese. The tortillas a very soft, so I cook them dry in a pan on both sides in order to get rid of the moisture (gummy food gets stuck).  The a little shredded cheese on one half, the seasoned chicken, and then a little more cheese and I fold it in half.  Crisp up both sides while the cheese melts, and serve cut in wedges and dipped in spicy salsa.  YUMMY. 25gms protein, 10gms net carbs, and 10gms of fat.  It's pretty high in sodium (about 60% of what I'm allowed in a day), but well worth it. I'm pretty early out so I have yet to eat the entire half, but I eat about two thirds of it.  My wife and kids get less spicy versions of the same thing and will less emphasis on drying out the tortilla so theirs cooks much more quickly.  As a matter of fact, my youngest likes quesadillas mushy so his gets cooked in the microwave.  Plus my oldest is at his college orientation this week, so less to make.  All in all a very easy meal for the family.

2 weeks post op and just started pureed meats so 1/2 cup corn beef hash smashed with a little tabasco. OMG is it good. Small things give me big happiness. It's all part of my new Zen outlook...

  eeew iron infusions.. that doesn't sound pleasant .. I really hope I never have to have them. I had potassium IV's early out and those suck too.
