I'm a vegetarian, but I know lots of people eat chili very early out. I'm assuming chili made with beef - I know Wendy's chili is popular. Some people puree chili and eat it just a couple weeks out. Everyone is different, but many people seem to handle it just fine. I just wondered why your surgeon recommended waiting a year to eat it.

The crock pot is your friend. You can make any meat super moist by cooking ot in a crock pot with a cream soup. The crock pot won't make the kitchen hot either.
You can marinate chicken in greek yogurt for at least 4 hours but better overnight, and it's super moist tossed on the grill. Chicken thighs are more moist than breasts.

Lamb is probably my favorite meat at this point. I love greek food so I go to the local Greek place and get a lamb gyro with no pita. A little bit of their lamb with some tzaziki and feta. Then they add a side of grilled watermelon. So delicious!
Pork I do okay on if it is cooked in the crockpot. I can only do chicken thighs and they have to be done in the crockpot too. Ground meats have been a big issue for me so I avoid them. IMO the easiest way to insure tender, moist meats is to cook it in the crockpot or a pressure cooker.

I just called DH to make him go get me one lol. After typing it I realized that is what i wanted for supper. The nice thing is the Tzaziki is made with Greek yogurt so that is added protein plus there is protein in the cheese. Our local restaraunt also has the best homemade pitas. They offer a homemade whole grain pita that I get sometimes and have a few nibbles of. So delicious! Out of all the meats out there my pouch loves lamb the most.
