What's for dinner? Tuesday!

Strange thing. I am actually really CRAVING a protein shake.


I usually drink them but don’t necessarily crave them. I crave flavors that I make into shakes but not so much a shake itself. Strange.


So I’ll probably have a mocha shake and then later I’ll have my Mexican Eggplant Stackers for dinner. This is based on an Eggface recipe but I tweaked it with what I had/like.

 

Basically I cut eggplant into discs and dredged in a “rub" of garlic powder, onion powder, salt, pepper, cumin, coriander and ground chipotle pepper. Then I brush a little oil over them and threw them on my grill pan. Grilled them up then topped with cheese and grilled onions and threw that in the toaster oven to melt. Then I stacked them and put a layer of sour cream (tonight I’m using Greek yogurt) and salsa. YUM!

 

I need to have something with this as it alone won’t hold me for long. I dunno though. If I eat late after having a protein shake it might. Anyhoo, here’s what else I had today:

 

  1. Breakfast burrito: low-carb, whole wheat tortilla with sautéed lowfat deli ham, tons of onions, diced tomatoes and Mexican blend cheese with a squirt of ketchup
  2. ½ a turkey and roast beef sandwich on whole wheat with lettuce, tomato and onion and a cup of spicy vegetable soup (this is the beautiful thing about decent pouch capacity. That meal is entirely possible for me).
  3. Carrot sticks and Asian Fire hummus (I get it from a local at the farmer’s market)

 

On a separate note, I’ve been enjoying my eating life a lot lately. Initially it scared the crap out of me that I could eat a decent amount of food. Like my lunch for instance. But then I thought to myself, “Self? C’mon! It’s a normal sized meal which is what your surgeon said you’d eventually eat." Now I’m all good. So long as I don’t go bonkers.

 

Anyway, getting out of my strange head…what’s on your plate?

You do such a awesome job with your yummy recipes!! I wish you lived with me, Iol I could never think of all the different ideas you have. They are sound so good!!

Dinner tonight will be leftover chicken curry over Nik's FABOO cauliflower rice. The curry is a Pampered Chef recipe, tweaked to make it a little more WLS friendly. It's basically onions and carrots, chicken, pineapple chunks (instead of raisins), in Lite Coconut Milk with salt/pepper and yellow curry powder. It's not at all spicy, but has good flavor especially after it's been sitting a little in the fridge. Next time though, I may marinate the chicken in greek yogurt first.

Today I've had:

24 oz iced coffee
24 oz crystal light
scrambled egg w/cheddar cheese and bacon
american cheese and turkey on Wheat Thins Flat Bread crackers
Oh Yeah! Choc & PB bar

I will probably have some grapes and brie later, that seems to be my go to evening snack lately. I made some protein ice cream yesterday (strawberry) but it's not fabulous because I made it with 1% milk. Next time I'll invest in some fuller fat milk to make it creamy.

I LOVES me some cauliflower rice! I do it all old skool sometimes and just put some zero cal butter spray, salt and pepper on it. :)

I have a curry dish on BF. Yours sounds similar. I usually don't do raisins in my hot curry though (although it sounds nominous). I have a curried chicken salad where I use golden raisins. Mmmmmm...both are on the blog btw. :)

I am on an egg kick here lately. I dunno what that's about but I am loving me some eggs!

my breakfast was scrambled egg with cheese, lunch was 1/2 turkey sandwich on whole wheat thin bread, and dinner was 2 hot dogs boiled no bread  few french fries with little ketchup. drink my water but not with meals and tonight thinking of having a few whole grain crackers want peanut butter on them but I have not eatten peanut butter in a long time cause i only had them before with milk to wa**** down and drinking with meals are a no no but wonder if its ok to have 1/2 c of 2% milk with them... Pls let me know if its ok to have thanks......Roxanne
