What's for dinner? Monday!

Breathe, breathe, breathe…ok!
Hi. Happy Monday! I look forward to the day when I can again have a sane computer and thus access the interwebz easily on the weekend. We’d all gotten into the habit of chatting and everything and then POOF! There went my computer. Sigh. Story of my life, I am afraid.
S’anyway. I am on my own this week. The divas have abandoned me in favor of a week at Girl Scouts camp. When they are gone I eat sort of like a bachelor. In that, I mean that I eat the simplest things imaginable. Things that take virtually no skill to cook.
I did make something yummy last night though. I took Eggface’s recipe for eggplant stack ups and remixed it. I dredged them in a combination of salt, pepper, onion powder, garlic powder, coriander, cumin, cayenne pepper and chipotle pepper and then brushed a little bit of olive oil on them and threw them on my grill pan. When they were all nice and grilled, I put them on a baking sheet, topped with Mexican blend cheese and threw those in the toaster oven. When that was done, I put one on a plate, topped with sour cream and salsa and repeated.
Ok, so maybe I am not eating like a bachelor. A bachelor would have quit somewhere after the dredging. J
Anyhoo…my other great eats for the day were scrambled eggs and cheese. Yep. That’s some bachelor eating.
Dinner tonight. I’m meeting up with an ex for what I think HE might consider a date. I hope not. But still. He’ll probably campaign for Olive Garden. Sigh.
What else I’ve eaten today:
- Breakfast taco (this time with honey ham I sautéed until crisp, a mountain of grilled onions, a little Mexican blend cheese and some ketchup.
- Burrito bowl (from the fake Chipotle down the street. Bowl with no rice. Lettuce, black beans, a little corn, pico de gallo, sour cream, cheese and tilapia. NOMMITY NOM! Without rice I can eat the whole bowl)
- Two chunks of watermelon. My heart wasn’t in it so I stuck the rest in the fridge.

Breakfast: Ham with High Protein Bread and Coffee
Lunch: Pastelon (Yellow Plantains layerd like lasagna noodles with ground turkey, tomatoes, and cheese, then baked) This was leftovers from a meal my mom made this weekend
I have some fresh peach slices and some beef jerky for an afternoon snack later
Dinner will be rostissery chicken with home made salsa (I made it for the first time this weekend and it rocks) and probably a bit of rice and beans on the side.
For my kids, my philosophy is simple: make stuff they like, just make it with better stuff. On Bariatric Foodie I have a category under my recipes for "BF Kid Zone" (if you scroll down on the right hand side you'll see the categories). You'll see what I fix for them is still WLS friendly but also kid friendly. My main rule is that I don't fix them things I absolutely can't eat. How can I have high standards for my meals and not theirs? Granted, they can eat carbs that I can't or shouldn't have but still. I try to make their meals as healthy as possible!

I had a isopure smoothie for breakfast
snack was a couple slices of salami
lunch shrimp
Dinner was taco on a plate.
I will maybe have a protein snack sometime later this evening.

Lunch: Vanilla protein shake with 2 squirts of Devinci coconut powder
Dinner will be 1/4-1/2 cup on blended potato soup with protein powder added. It's a package mix from Homemade gourmet. I just added skim milk instead of 1/2 and 1/2 and didn't add extra potatoes. Yummo.
Snack: Protein shake
Pretty boring but I am only 2 weeks out.
Need to do laundry today. I am running out of clothes I can wear. And since I need 2-3 outfits daily... that say something... (one for exercise, one for work and one once I get home..).
I do find out that I have more clothes that should be allowed... but most of them were not expensive (thrift store, etc) so it is not too bad.
Mu job is flexible on what I can - need to wear, and the only limitation are the temp outside (hot, really hot, unbelievably hot, horrible hot +humid) that makes the clothing choice somewhat limited...
