Comfort food in the middle of summer: Chicken and Corn Chowder

This is the best dish I never got a picture of. The kids ate it too soon!

But I did get this super cute pic of my three year old nephew helping me cook the chowder. Isn't he precious. He stayed with us overnight and helped cook chowder, a grasshopper trifle AND low-carb blueberry pancakes. The boy is the next Emeril Lagasse, I swear!

He's very cute! Nice that you're teaching him to make healthy meals at such a young age. I'm salivating over the idea of chowder! I'm on my liquid diet until surgery Monday. I'll have to bug you for some yummy recipes when I can start eating again. Thanks for sharing. :)

Nik, I am making your cauliflower rice tomorrow to go with my chicken curry...I am excited and a little frightened. I had to buy a potato smasher since I don't own one, lol. I'll let you know how it goes.
