I just dump about a three pound bag of frozen chicken breasts in the crock pot, pour a 16-18 oz-ish jar of salsa over it and let it cook on low all day while I am at work.  When I get home I use a ladel to take some of the liquid out if it is too watery and then I drop a brick of reduced fat cream cheese on top, cover it up and go do laundry or something for about 45 minutes.  When the cream cheese is a little melty I stir the whole thing up and the chicken falls apart.  I then have amazing shredded chicken for tacos, enchiladas, roll-ups or I just eat it plain w/ some canned black beans and Frank's Red Hot (I put that s#%t on everything!)
