Barbecue bacon cheese meatloaf

After mentioning the barbecue bacon cheese meatloaf on the eating thread, a few folks asked for the recipe.

 

I will probably feature it on Bariatric Foodie, but here’s the recipe just the same.

 

Nik’s Barbecue Bacon Cheese Meatloaf

 

Ingredients:

 

1 lb. lean ground meat (I use turkey)

1 lb. ground pork (not lean)

1 small onion, finely diced

1 green pepper, finely diced

1 large egg

5 slices of bacon, crumbled

2 c. shredded cheese of your choice

1 bottle low-sugar barbecue sauce (I use regular most of the time as it doesn’t bother me but your mileage may vary)

Salt, pepper, onion powder, garlic powder

 

Directions

 

In a large bowl, thoroughly mix all meat.

 

Mix in vegetables, egg and seasonings thoroughly.


Spread a piece of plastic wrap on the counter and deposit meat mixture onto it. Pound into a large, flat disc.

 

Spread cheese over the disc then the bacon.

 

Using the plastic wrap, roll into a loaf, pinching closed the sides. Transfer to a baking pan.

 

Brush the top and sides generously with barbecue sauce.

 

Bake in a 350 oven about 35 minutes. Pour the remainder of the barbecue sauce over the top and cook another 10 minutes or so.

 

Cool before slicing.

Dumb question, but can I half the ingredients?  I live alone and would not eat that much meatloaf before it wasn't so nice to eat!

Everything except for the egg ;)

If you figure out how to halve an egg, let me know!

This is a big loaf but my girls are crazy about meatloaf. That stuffing one lasted all of four days. They literally ate it for 2 of 3 meals a day.

But if you live alone, you might also get either a mini-loaf pan or bake them in muffin tins. Those freeze really well. Then you have quickie dinners for other days!

Possibly!

But in this recipe, I'd still use the entire egg ;)

Recipe sounds delish!!! I like looking on your site for healthy alternatives of my familys fave foods!! I am trying to get all my fam to eat healthier!!
