What's for dinner - Tuesday night!!!

Man, I have a BAD case of vacant pouch syndrome. What's that? It's when you perpetually feel like your pouch is empty. It's like I am the bottomless pit. Although, I did just do my food journal and that's shedding some light. My "hearty lunch" clocked in at a whole 166 calories. So it's no wonder I was starving by 3 p.m.!

I need to cook a few dinners so that I can have stuff ready when I get home. That's what works best for me but since I wasn't home last weekend I didn't cook ahead. I decided that tonight I'm making the meatloaf for tomorrow night (with garlic smashed red potatoes for the divas and some steamed brocolli) and that tonight I'll either make a high fiber chicken quesadilla (which I did not end up eating yesterday. Went with a McD's Southwest Chicken Salad) or some sort of alfredo concoction.

So far today I've had:

1. Protein Berry Explosion Parfait (that name is jazzy!) - Greek yogurt (with whey and Splenda), Hi-Lo Vanilla Almond cereal, blueberries, strawberries (42g of protein!)

2. Curried tilapia stew

3. small apple and  yogurt

Yep...I have the munchies...Lord help me I am craving potato chips. I will RESIST!

ooo I like that  parfait name and i wound up adding curry to my tilapia last night too prob cuz I saw your post :)

That meatloaf sounds good too. I want to buy one of those individual loaf pan thingys, I saw one at Wal-mart last week, would be good for portions prob cuz I'm such a pig and eat so much  ha ha!

B- Eggface chocolate almond protein smoothie
L- 2 over easy eggs, two lean turkey bacon, one slice Julian's smart carb toasted ICBINB spray and spread.
D- Ceaser salmon salad
S- 4 oz F&E turkey meatballs, BBQ sauce

Try making your meatloaf in a cupcake pan. Then you can freeze your extra little cakes/loaves. Perfect portion.

 Dinner tonight will be *drumroll*

LEFTOVERS!! Yay!  My favorite.  Leftovers planned tomorrow too.  The fun part of 'cooking too much' and family going in 3 different directions for 2 nights.  I'm not cooking a meal when we have food in the fridge and no one home to cook for anyway.

I have strep throat and an upper respiratory infection.  My honey made me a pot of homemade chicken soup last night.  I will eat that until it's gone or I feel better, whichever comes first.

I ran out of time to eat today!!!

I had a protein water while I worked out

B: quiche I made a few days ago, didn't sit well then, okay today
L/S: Greek yogurt (6 oz) three large strawberries
D: leftover chicken cabobs, bell peppers, pickle.

I don't think I have all my protein in, so I will try and have something before bed.  Maybe another serving of quiche?  Haven't made up my mind. 

I was never hungry, but had that nagging "I should eat something" mantra running through my head all day.  Hate that!

B: greek yogurt, SF apricot spread, Atkins bar (for texture and 10 extra grams of protein)
Snack: Isopure green tea; nectarine
L: salad with chicken and lowfat swiss (Finlandia-really good)
S: pork tenderloin rubbed with minced garlic, onion, kosher salt and cracked black pepper-roasted and then grilled with Stubbs BBQ sauce; diced eggplant sauteed with garlic and then simmered with 1/4 tomato sauce and topped with shredded mozzarella.  Delicious!

For the day it gave me: 22 grams of fat, 57 grams of carbs, 110 grams of protein and 860 calories.

Finally made the Turkey Chili I've been talking about making for weeks. Ground Dark Meat Turkey, Red Onion, White Onion, and Garlic Sauteed in a bit of Olive Oil, then I added a couple of tomatoes a few different colored peppers and a can of chili beans. Spiced with S and P, Cayenne Pepper, Curry Powder, Cumin,Turmeric, and Shriracha. Served with Cole Slaw made with Smart Beat MAyo and Splenda Cole Slaw. DELISH !!!
