Scallops!

I can't tolerate any meat or seafood but tonight I had bacon wrapped scallops from costco and it was WONDERFUL! I am SO excited to find something that sits well. The bacon was pretty fatty so I picked off and only ate the crispy part.  Where can I buy frozen scallops and how do I cook them and season them? They scallops have a good amount of protein?

Most supermakets sell frozen scallops. My favorite way to have them is broiled with salt, pepper, fresh lemon, fresh parsley and some low fat butter.

I also found a recipe online that is similar to that but you add Parmesan cheese. I will dig it up and post it for you in a few.

Here's a link to the recipe I mentioned.

I did not use the Melba crackers and I used low fat butter instead of the full fat stuff. Make sure you dry the scallops as well as you can or they become soupy instead of "crusty"

Enjoy!

Edited to add: yes scallops have a very good amount of protein. About 4g per ounce.

I bought a 2# bag of frozen scallops at the supermarket.  I spray a small skillet with PAM and saute some chopped garlic and add the scallops and cook about three minutes on each side until opague.  I can tolerate some meats but can't do chicken or turkey yet.  The scallops are done in 5-10 minutes.  I usually only can do 3 sea scallops. YUMMO.
Glad that you are feeling better.  I have been following your updates and have felt so bad that you have been having a rough time.  Do take care.
