What's for dinner - Monday!

Ok, I figure I owe you guys some food porn as I've been scarce. So here you go. This is my dinner:



It is a traditional lasagna (which means, yes, it does have noodles) but I made a bunch of swaps to make it just a wee bit healthier. I made it for my baby loves and I want to be loving them for a long time to come so we gotta eat well!

Recipe will be on Bariatric Foodie later this week.

I just had a humongous salad with Krab and Shrimp and avocado and sour cream and tomatoes and cheese. Yum

that looks good from here.  : )  i made a "healthy cassoulet" which was pork tenderloin (trimmed and cubed), 4 slices turkey bacon (cooked and crumbled), onion, garlic, carrot, celery(all diced), sage, thyme, bay leaf, wh wine, stewed tomato, and navy beans. first cook all meats until browned, then drain. put all together in a baking dish, topped with some cooked quinoa bake until browned and bubbly 3 hours. it was yummy.

Chicken fajitas at my house tonight:

Boneless, Skinless chicken thigh meat, trimmed and grilled with onion and lime then cut into strips
Bell Pepper and Onion sautee
Fat free cheese
Fat free sour cream
Corn tortillas

Maybe some fruit salad for dessert?

Well my supper is pretty tame tonight:  roasted chicken, raw veggies, nectarine.

But -- I am keeping it simple because after work, I have a massage and then off to an OA meeting.  So life is actually pretty darn good even if my food's a little boring tonight :).
