What is it? It's my Fiesta Chicken and "Rice" skillet. It takes about 20 minutes to make and you get the added bonus of watching your kids lap up vegetables in spite of themselves.

Hey Nik -This is a little unrelated but I made the carrot cake muffins for my friend who is 6yrs out from WLS and she loved them!  She even shared them with the office and they were a big hit!  Non WLS people were asking for the recipe! Love your website!
