Banana protein muffins

I've been super craving banana bread, so I finagled this Atkins recipe to make my own version.


Ingredients:

2 cups of Atkins Cuisine? All Purpose Baking Mix
3 teaspoons baking powder
10 packets (1g each) of Splenda® (or 2 teaspoons)
2 tablespoons salted butter, softened
2 eggs
1 cup sour cream

Directions:

Pre-heat oven to 350°F.
Blend all dry ingredients together in a large mixing bowl.
Add wet ingredients with a spoon or spatula and mix thoroughly.
Lightly coat mini muffin tins with non-stick vegetable oil spray (or add paper mini muffin cups).
Spoon dough mixture into mini muffin tins.
Bake at 350° F for 18-22 minutes or until done.
Recipe makes 24 mini muffins.
About 2 net carbs per mini muffin.
*Add berries if desired


I made mine with Greek yogurt instead of sour cream, I rippe mashed banana, an additional 3tsp splenda, 1/2 tsp cinnamon and cloves. It seemed dry, so I added about 1/4 milk.

They are soooo yummy with a little butter or PB. I eat one before I go to the gym. With my ingredients, comes to about 6 grams protein per muffin. Enjoy!

Thanks ladies! I think next time I will add another banana and more cinnamon. I love experimenting!

My DD (2 yrs) ate 4 of them this morning with PB and she kept calling them cookies, lol.
