Coconut custard pie????????

 I honestly don't think it is a good idea. Celebrate a differenet way this yr. You and your mom go get a mani-pedi. Go shopping. This early out we need to stick to the rules and stay away from things that got us here in the first place. 

Maybe when we get to the maintenance phase we can add those fun treats back in. I know its hard. I ahve my surgery on the 1st and my birthday is 13 days later. I already told my family no cake for me or anything to do with food. Which is what we usually do. Instead we are gonna go for a nice walk as a family.

I think YOU need to discover what works for you.  Instead of pie - just have the "custard" part and make it healthy and part of your plan.  SF jello pudding and FF milk ARE part of the plan.  I was also amazed at how great greek yougurt was with SF pudding in it.  The texture is very much custard-like.  Heck if you do the SF/FF pudding you could even throw a bit of portein powder in it.  FF/SF puddings are on my plan.  In my world discovering new healthy ways to satify our old cravings is sticking with the plan asnd planning for long term success.

I am lucky - I have a very happy pouch and it tolerates a whole lot this early out.  Sometimes I wish I got sick....sigh

I kinda feel like people are misunderstanding me. I definitely want to make it something that is part of my plan and that will give me protein and I really don't think I'm setting myself up for some big event. Or maybe I'm just deluding myself into thinking that. I used to think of food as an event and now I really don't. On my birthday I am going to go to the lake with my husband and have a nice outing doing that. That's also the day I go back to work! Which I'm excited about. So it really is not a day about food and I know I should be careful of introducing empty meaningless calories and foods that got me here in the first place. Like cake for example. A piece of cake would give me lots of meaningless carbs (and make me sick) and give me no benefit whatsoever. I want something that gives me protein! I've also been making a kind of cheesecake thing with ricotta and cream cheese. I eat a tiny bit of that and I don't even want anymore. It doesn't mean I'm introducing the bad foods back. That food gave me a lot of protein. So I just wanted to say I am going to NOT make my birthday about food. I'm so excited that my life ISN'T about food anymore when it was for SO LONG! This surgery has already, after 2 weeks, been the best thing ever.

I do understand that you want to find a healthy version of something to have on your birthday, but I think that most of the people here urging caution are thinking more of the psychological effects of having a food focus for holiday and such.  Most seem to say that changing their 'rewards' to something non-food related helps us psychologically get into the place we need to be... meaning, having a healthy relationship with food. 

That doesn't mean you can't ever enjoy a sweet treat... however, when we can successfully turn our perspectives around and view food as SUSTENANCE/FUEL instead of a primary source of pleasure and reward, it's been my experience that it's easier to maintain the lifestyle longterm.

So, many folks are urging you to try to change the intent of your focus, especially this early out when you're still in the phase of trying to set new habits.  That's all... no one is saying you should never have treats.  Rather, I believe they are trying to help your reinforce your mindset and positive behaviors going forward.

Whatever you decide, have a great birthday!   :)

(P.S.  I'm an Aries baby, too... m y birthday is this Friday, April 1st!  I think I'm going to spoil myself with a pedicure, new haircut and color!  I think it's time for some serious highlights and lowlights...  ;)   )

For some reason, I seem to be doing better with weight loss when I use Splenda instead of a stevia and erythritol mix. I do use a liquid version of Splenda which has zero carbs and calories so perhaps that is the reason. It has been a few weeks since I’ve baked a dessert, but I have been eating Splenda sweetened protein bars which are like eating candy. I wanted to make something sweet that would be fairly low in carbs and calories. Of course gelatin is always a great standby, but I wanted something with a little more substance. I thought about making some pudding and ended up with a baked custard. Coconut is one of my favorite flavors so I made some baked coconut custard in single serving cups.

  Low Carb Coconut Custard

 

3 eggs
⅓ cup Splenda or equivalent liquid Splenda
dash salt
2 ¼ cups coconut milk
½ teaspoon vanilla extract
2 Tablespoons unsweetened dried coconut
dash ground nutmeg, optional

Whisk together the eggs, Splenda and salt until the eggs are just blended. Heat coconut milk just to simmering. Gradually whisk heated coconut milk into egg mixture. Stir in vanilla extract. Pour into 5 custard cups. Sprinkle with nutmeg, if desired.

Place cups in a 13×9 baking pan. Add about 1 inch of ho****er to pan. Bake at 350 degrees F for 45-50 minutes or until a knife inserted near the center comes out clean.

Remove cups to a wire rack and cool for an hour. Cover and store in the refrigerator.

Makes 5 servings
Carbs per serving: 2g
