DH and I will split a boneless pork chop and I will have a 1/4 cup of some pinto beans.  He gets a baked potato to go with his beans.

Stuffed Peppers

  • 3 bell peppers (green, red, yellow… any color will do)
  • ¼ tsp salt
  • ½ tsp olive oil or nonstick cooking spray
  • 1 medium yellow onion, chopped
  • 1 pound ground  ground chicken
  • 1 cup corn (frozen works great)
  • 1 clove garlic, finely chopped
  • 2 Tbs Worcestershire sauce
  • 1 can (15 oz) tomato sauce
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded low-fat cheese (any flavor)

 

Preheat oven to 350 degrees 

In a large pan/skillet over medium heat, add oil or spray pan with nonstick cooking spray.  Add chopped onions, and cook just until slightly tender, about 4 minutes.  Remove onions to a dish, and set aside.

Place the ground meat in that same pan and coo****il evenly browned.  Drain fat.**

Add onions, corn, garlic, Worcestershire, tomato sauce, and seasonings to meat.  Cook on medium-low heat. 

Place peppers in a baking dish and add mixture to peppers add cheese.

Cook on 350 for 45 mins

* I used garlic powder instead of a clove

* I used homemade hot corn (corn with hot peppers cut up in it)

Baked chicken with carrots and potatoes, all bakes in one pan with onions and celery.  I am presurgery and trying to cut out carbs, so I will eat the chicken and carrots.

It all sounds so yummy! 

I did my usual cottage cheese with no sugar added peaches. Boring but high in protein, low in fat and creamy and sweet all at the same time.

I can't wait to get this endoscopy done and see if they find anything so I can eat without pain again!

I tried a new casserole recipe tonight...a knock off of the old broccoli and rice cassarole but I used Quinoa instead of rice. It didn't quite hit the mark so I'll tweak it a bit more.
