Just FYI - it makes great french toast. The spongy texture is perfect for this. I made it for me and my kid.

One egg
Splash of milk
1 Tsp vanilla
2 slices P28 bread
Pam spray or butter (your choice)
SF syrup or sweetened ricotta, jelly, whatever!

Beat egg, milk and vanilla in bowl. Dip bread into egg mixture and ry in pan sprayed with Pam. Top with your choice! One slice is all your need.

ETA: We have several recipes for different things with it on the blog, I posted links to specific recipes further down this thread. HTH

I just finished my slice for breakfast toasted with Naturally More PB (thanks for the tip Nik!).  I also like how full I feel when I eat it.  Most of the time I only eat half of a slice.

The P28 French toast is HEAVENLY!!  I fix that with a couple strips of the Morningstar Farms Veggie Bacon and feel like I'm in "hog heaven"  (put intended)    I usually do that for breakfast on the weekends when I actually have time to fix a good breakfast.

Another thing I use it for is to make a grilled ham and swiss sandwich for lunch a couple of days a week.  Of course, I split one slice in half for that because it's so dense and filling , but OMG!!  It's soooo good.

OMG I know, isn't it awesome??? I have 2 different French Toast versions I created with it: Bananas Foster French Toast and Stuffed French Toast with Blueberry SF Syrup. Keep an eye out for some more recipes for Nik's "Big Bite" Triangles coming this week. Her Southwest Tuna Melt one is scrumptious!
