I just made this fudge recipe, but not sure if it is going to turn out.  The directions say to boil the milk and splenda until the milk is very thick. . .like how thick?  How long?  Mine just kept sticking to the bottom of the pan and not thickening. . .so I took it off, threw it together, poured it in the pan (runny) and now put it in the refrigerator.  Not sure what to expect!  HELP!

I made this yesterday. It is verrrrrry yummy. My only problem with it is: it turned out like pudding.
I am not to sure what I may have done. I followed the instructions. This morning, I noticed that it was still mushy and even tried to put it in the freezer but there was no change....

What do you suggest???

Probably needed to boil it longer.  If you have a candy thermometer boil to about 234 - 240 or the soft ball stage.  I have also have really good results using the Whey Low sweetener.  Maybe what you have now would be good heated and put on some low carb vanilla ice cream for a hot fudge sundae

Thanks again for this recipe...it has been nice having a little something sweet that I can have this time of year and not feel (too) guilty!  It is really good!

Hi, This is a simple but good dish:

Cream Cheese and Shrimp Dip

1 container of whipped lite or regular cream cheese

1 container of the best seafood sauce that you can find. Use around 1/3 cup.

1 cup of cooked shrimp. Get good quality shrimp. Not cheap broken pieces of shrimp. Canned is okay if it has whole shrimp and is good quality.

Spread softened cream cheese on a regular sized plate. Put seafood sauce over that. Then put drained whole shrimp over that.

It can be eaten with anything. Califlower, cucumbers, whole grain or other crackers. I prefer regular Ritz crackers. This is actually what I mostly ate for my 1st Thanksgiving.

I've found cream cheese to be a great base for some yummy treats too! I take a piece of thin sliced hard salami from the deli and put some cream cheese and a little piece of pickle in there and roll it up...yummm!

I also take my left over salmon (since left over meat is a bad idea for me!) and stir it into a tub of cream cheese. It's the best dip!!!!

I am an eggnog freak and I use this recipe from an old diabetic cookbook.  Sometimes I add some Unjury unflavored protein to bump up the protein content.

1 small box sugar free Jello pudding, vanilla
2 quarts 1% milk (skim if you want, I can't take it yuk)
1-2 tsp rum extract, depending on taste
Cinnamon and nutmeg to taste

I mix the pudding according to box directions, using only 2 cups of the milk.  When it starts thickening well while I am stirring, I mix in the extract and spices.  When thick enough to be barely pourable, I mix in the rest of the milk, put it back in the carton and shake it well.  If you like your eggnog thicker you can use the larger, 6-serving box of pudding. I even blended this with some brandy for my guests who desired alcoholic eggnog and they liked it really well.
