Hawaiian Watercress & Tofu Salad

I made this last night because I was really hankering this.  I use to make it all the time in Hawaii as watercress so readily available.  

1 bunch watercress
1 block of fresh tofu-firmness your choice
1 pint of grape tomatoes-cut in half or quarters
4-5 green onions-finely slice from end to end
2 cups of fresh bean sprouts

toss it up

Dressing
1/2 cup of soy sauce
1/4 cup of toasted sesame seed oil-ya know chinese style
1/4 cup white vinegar
2 T spoon sugar or any other sweetener you would like to use
2 cloves grated garlic
1 T grated fresh ginger
1/4 water

Dress the salad as you eat it.  The slightly sweet dressing off sets the peppery cress and the acid of the tomatoes. To boost the protein one could add chicken, tuna, salmon. 

I tossed in some cucumber today as well.

No nutrition values, just plain yummy

It looks delish. I like tofu. Would you tell me: how soon after your surgery were you able to eat fresh green veggies? My sister had a horrible time with it at first, and I would like to avoid the pain. Thanks again for the recipe.

Oh gosh, hardly can remember now.  I know I was able to everything in this salad buy around week 5 or 6, but I chewed really really really really well.  Did say I chewed really well??? LOL

Being Chinese I love tofu and I love it as is, not in a smoothie or in a pie or anything like that...LOL

I'm not Chinese, but I like plain tofu as well. I'll try to screw up my nerve here soon for leafy greens. Thanks, again!
