Hey everyone!
It's raining, its cold, it's a day that screams comfort food... So on the stove I have a huge pot of homemade spaghetti sauce and meatballs simmering away and decided to make the Carbquik chocolate chip cookie recipe (slightly altered).

Here's MY version:

Carbquik Toll House Cookies

1 cup Carbquik  **EDITED TO CHANGE AMOUNT FROM 1.5c**
1/2c. vanilla whey protein
1/2tsp baking soda
3/4c sugar free chocolate chips
1/2 tsp salt
1/3c + 2TBSP brown sugar twin packed
1/3c + 2TBSP splenda
1/2tsp vanilla extract
1/4c egg beaters
1 stick of light butter, softened

Combine carbquik, baking soda and salt in a small bowl. Beat butter, splenda, brown sugar twin and vinilla in a large mixer or wol till butter is well creamed. Add egg beaters. Gradually beat in Carbquik mix and protein powder. Stir in chocolate chips. Drop by rounded tablespoon onto un greased baking sheet and bake for 9-11 minutes or until golden brown. Cool on cookie racks. Makes 24 (2 dozen) cookies.

I did try one and they're pretty good. They're not chewy and soft like Nestle Toll House Cookies are, but i think with a little experimentation, they could get there.

Yum, love some cookies! I think it's awesome we can still enjoy comfort food like saucy meatballs and a fresh-baked cookie...

Ditto on the glowing compliments on your pic & weight loss progress...you're looking like you feel, I bet! Enjoy this autumn, my favorite time of year. Alas, I'm in South Florida, where it's always summer (with a bit of relief in the "good weather" in the coming months).
