Cooking with whey as a substitute for flour is more dense and therefore harder to cook all the way through. For me the best solution is using the bunt pan AND muffin cups :)

So muffin shape is a perfect method :)

I made this over the weekend and used a jelly roll pan to make 'bars'.  They came out perfectly cooked, my kids AND DH loved them...had no clue that I used protein powder instead of flour either.

I can't wait to try the pumpkin muffins next.

Hi all,

I had to try this yummy recipe for protein banana bread.  I wish I had of read the latter posts about the whey not cooking all the way through.  I have mine in a glass dish baking now in the oven.  I sure hope it cooks all the way through because this sounds like an excellent recipe and I hope mine turns out.

Whenever I cook with glass I use a lower heat and cook for longer.

Me again,

I used a glass baking dish, and mine turned out perfect!  It's really delicious!

Thanks for sharing such a wonderful recipe!  I'm going to try using pumpkin next time.

I made these today!

I didn't have banana extract so I just used vanilla extract.

used 3 medium nannas

made 8 mini meat loaf loafs.

OMG!!!!!!

it worked and  its yummy.  20 minutes in the oven and I'm in heaven
