Carbquik apple pie

I am testing out carbquik pies for thanksgiving.  I had some apples getting too mealy to eat raw so I slice em up and made a pie.

I used 2 cups of carbquik with about 1/4-1/3 cup of coconut oil and 2-3 tbsp cold water and used a pastry cutter to get a coarse consistency then balled it up in plastic wrap and stuck it in the fridge.  I sliced up my apples added 1/2 c of splenda and 3 tbls carbalose (the fllour carbquik is made of - contains no leavening) 1 tsp cinnamon and nutmeng and 1 tbspoon diabetisweet Brown sugar.

I patted the crust in the pan - I had a decent amount leftover that I mixed with 1/2 c of brown sugar diabetisweet and crumbled together to make a french crumb topping.

baked at 425 for 40 minutes - yum!!

Next time I would use better apples -  these were nt apple pie apples so they diminished in size and got a bit too mushy for my tastes.  My apple pie lovin carb lovin husband loved the pie!!  I think it will be better with more fruit but he was satisfied! 

By the way I love cocnut oil - i could eat that the way nik eats her PB  - by the spoon!  (of course i don't, but I do lick it off my fingers!)

oh man - you had me at "apple pie."

RNY 6/16/09 - Last weighed 10/27/2011 weighed 151 lost 52 pounds  66% toward personal goal  of 125, six pounds from unofficial unpretentious goal of 145lbs......basically very happy.   boo-rah, RNY!

I have everything but the cocunut oil..hmm..I wonder what I could use in it's place.
We are starting to get some good apples around here. Thanks for the recipe.

Normally, pie crust is made with shortening or oil.  I used coconut oil because it is a healthier natural option!  No hydrogentaed fats/oils and it does not leave a layer of slickness in your mouth like shortening.  It is still a fat though!
