Toast, crackers and peanut butter?
I found low carb crackers at the health food store and I allow myself to have 4 or 5 a couple of times a week with laughing cow cheese. I have PB2 but haven't tried it yet. I also (before WLS) would buy natural PB and pour the oil out before stirring it and eating it. The oil all comes to the top when it sits and then you can just pout it out. It makes the PB very hard to smear but it still tastes good. I would worry about not being able to drink while eating PB though, what if it sticks?
the ONLY peanut butter i will eat is the PB2 (mentioned above). if that didn't exist i would probably shun peanut butter forever. it's really not good for you-- there are other ways to get your protein without all the fat, sugar and calories from peanut butter, i'm afraid. if you have to have bread i would check for some sort of low carb baking mixes. i think there is some sort of low carb bread that you can buy as well. i don't buy crackers so i can't help you there.
