Simple Carbquik Chicken Pot Pie (recipe and pics!)

If you like comfort food, this is the comfort-iest! I'll tweak it a little, but here's an easy basic single serving pot pie! (2 servings for earlier outs!)



Easy Carbquik Chicken Pot Pie

Filling:
1/4 c. Heinz Fat Free Chicken Gravy
4 oz diced pre-cooked chicken
4 oz peas/carrots mixed
shake of onion powder

Crust:
1/3 c. Carbquik
2 tbsp skim milk
2 tbsp egg beaters
1 tbsp reduced fat parmesan topping
2 shakes garlic powder

Preheat oven to 400 degrees

1) In small bowl, combine filling ingredients and microwave 1 minute

2) Pour into greased small Pyrex casserole (2 cups?) or small oven safe bowl

3) In other small bowl, mix crust ingredients for two minutes with spoon

4) Spoon on top of filling mixture.

5) Bake at 400 degrees for 15 minutes or until biscuit crust looks golden and tasty.

For one pie:
324.5 cals
5.2 g fat
34.2 carbs
39.7 protein
13.5 fiber (so low net carbs)

mmmmm... looks delish!  I LOVE chicken pot pie!  I've never heard of Carbquik... but I assume it is a low-carb type product like Bisquik?

It certainly is comfort food... but the million dollare question is... how do you make Mac 'N Cheese into a RNY-friendly recipe!

There are plenty of recipes for that out there.  Personally I use smashed cauliflower to make what I call "fake mac 'n cheese"

Nikki’s Fake Mac 'n Cheese

    Ingredients:  
1 head cauliflower
1/4 c. milk 2 tbs. butter (I use I can't believe it's not butter)
1 cup + 1/2 cup sharp shredded cheddar cheese
1/2 c. mozzarella cheese
1/2 c. Parmesan cheese
1 egg, beaten Salt and pepper  

Instructions:  
1.  Boil cauliflower florets until tender.  Drain and transfer to a bowl and add whatever seasonings you like (I like just salt and pepper and I use a good amount of it).  Add milk and butter and mash with a potato masher until the consistency of rice.  
2.  Mix in 1 c. cheddar, all the mozzarella, and half your Parmesan, and your egg.  Transfer to a casserole dish and top with more cheddar and parmesan.    
3.  Bake in a 350 oven, uncovered, for 30 minutes

That's not a tiara. I just bedazzle my horns.

Nik has a mac 'n cheese-like recipe. It's good stuff!  I mixed some shredded cheddar with a little panko bread crumbs, sprayed the mixture with Pam and sprinkled it on top. Mmmmmmm.

It's one of those things, to me, that tastes better as leftovers than it does the first day you make it.  I had some the other day with my lunch and it was DELISH!

Here's a good variation if you:

a) want this as a main dish with protein
b) like Mexican style food

Add to one cup of lukewarm water a dash of onion powder, garlic powder, and cayenne pepper (or 1 tbsp taco seasoning).  Add to that 1 c. dry TVP and let it soak for a few minutes.  Add that + red and green bell peppers, onions and mushrooms (all optional), and 1/2 c. prepared salsa before you bake.  It's like a mexican cheeseburger mac!  The divas loved it.  Thought they were eating meat.

I (used to) make a BBQ Beef Bake recipe (it came from Bisquick) that my family loves. Perhaps I should send it to you or Shari to make over with the CarbQuick.

Nik and Squidsmom, thank you so much for the noodless mac 'n cheese recipe!  I'll give it a shot!  I'll have to be careful though... for some reason, broccoli doesn't give me gas or GI trouble, but the 3 times I tried cauliflower post-RNY, it's given me gas and upset my colon.  I know things change in time with this post-op period... so I'll give it another shot!  (the cauliflower was cooked the 3 times... raw scares me based on how strongly it affected me cooked!).  I love mac 'n cheese once in a while and I've been seriously jonesing for some!
