The Best Dinner Since Surgery....Thanks Shelly!!!

Hi guys!  With only being able to eat about 3 ounces of food, eating has been simple and relatively bland, but, last night, BAM and Yum!

I took one of Shelly's (AKA Eggface) recipes and made it lower in fat for me.  I made her Baked Ricotta.  Oh my go**** was soooooo good.

Here is her recipe with a few updates from me...

  Shelly's Baked Ricotta

8 oz of Ricotta Cheese – I used Fat Free
1/2 cup grated Parmesan – I used ¼ Cup
1 large Egg, beaten
1 teaspoon Italian Seasoning
salt & pepper to taste
1/2 cup Marinara Sauce
1/2 cup shredded Mozzarella Cheese – I use 2% Italian Cheese Mixture

Mix ricotta cheese, parmesan, beaten egg, seasonings together and place in a oven proof dish ( I used 3 small soufflé cups). Pour marinara on top and top with mozzarella cheese. Bake it in the oven @ 450 for about 20-25 minutes (best) or nuke it till hot and bubbly. I usually made it first in the oven and heated the leftovers in the microwave.
  

I did the math, about 18 grams of protein, about 200 calories, 8 grams of fat, and 6 grams of sugar…all estimates

...and Hunniebear, that picture is of it cold.  It was so good and so easy to make.  Now I have two already prepared that I can freeze or have as leftovers....yummy, yum, yum

Hey, I see you had surgery on recently.  How are you doing?

Thankfully, I am doing really well...thanks for asking! =)

I have been tracking my food and seem to be getting eall my protein each day--mostly from my food--which makes me happy. =) I still struggle with drinking enough, but I do pretty well. =)
I've been going to the gym a few times a week--I should probably increase that--but, baby steps! LOL

But, all in all, I am feeling really good. =) YaY I am down 67 since surgery and 82 all together. =)

You had your surgery recently too? How are you? =)

I am pretty good.  About 2 1/2 weeks after surgery I got Pancreatitis and it through a wrench into the mix.  This week, I have finally started feeling better.  I am down about 20 ish pounds.  Before I got sick, I was getting in all my liquids, protein, and I was walking 2 miles a day.  Now I am trying to build back up to that.  I had to start with eating first.  Each day is better.

Wow, you've been through a ton in a really ahort time! But, good for you for getting back on track! I have learned that baby steps work best--but sometimes, those baby steps are BIG steps!

And 2 miles? wowee! I can barely do 20 min on the treadmill! But, it's better than nothing, right?
20 pounds in 2 1/2 weeks is FABULOUS!! Good for you, girl!!!! Keeep up the great work!

Well, best of luck to you!!! And, I hope you stay feeling good! Pancreatitis does NOT sound fun!
