Salads
MMmmm salad....
I couldn't wait to get back to my spinach salads and after a very careful try at 6 weeks out found I can eat them with no problem (just have to be sure to really chew!).
My strategy is to get my protein in first, say chicken breast on the salad. Then if I have any room left, I eat the spinach, to which I add a couple of almonds, some feta cheese, dried cranberries and/or strawberry or apple slices. For dressing, I splash with balsamic vinegar and a few drops of EVOO. If I haven't had all my carbs yet, I'll have a whole grain cracker or piece of toast.

Well now that you mentioned it I had my first post op salad just yesterday... And diarrhea all day today... I guess my pouch doesn't appreciate them just yet! I hope it changes it's mind by summer...
I have a salad almost everyday at lunch. I have spinach and baby butter lettuce, chopped cukes, cheese, a diced egg, a strip of bacon and either cubed ham and turkey or cubed chicken. I use a litlle Ken's Reduced Fat Honey Mustard dressing or a little ranch. This gives me plenty of protein and a few veggies too.
