Comfort Food recipe-- Chili and Cheesy Cornbread

I ain't gon' lie-- it's carby. CARBAYYYY! But it's also relatively healthy, so what the hell!



CHILI AND CHEESY CORNBREAD

First the cornbread-- you can make this in 12 regular sized muffin cups or 24 small. Yields toooo many, so I halved it. You can pour into paper muffin cups, but they'd taste even better if you just sprayed with PAM and poured 'em in. It's an old 'net recipe that I tweaked to be better for us.

In one bowl, combine and set aside dry ingredients:
2/3 cup whole wheat flour
1/2 cornmeal
2 tbsp granulated Splenda
1 1/2 tsp baking powder
1/4 tsp salt

In another bowl, mix together:
1 cup creamed corn
1/2 cup egg beaters
1/2 cup 0% greek yogurt
1/2 cup reduced fat cheddar, shredded (I used Cabot)
1/4 cup finely diced scallions

Dump the second bowl into the dry ingredients and mix.

Preheat oven to 375 degrees. This will yield12 regular muffins or 24 mini muffins-- I made the minis but would suggest the bigger size. Spray the tins and pour in your batter. Cook 15-20 minutes, or until inserted knife comes out clean. Serve with butter (WHEE!) or if you prefer, butter spray.

To make the chili, pull your car up near the speaker at a Wendy's drive thru, yell "Can I have a small chili please?", give the cashier $1.49 and drive home and toss some diced onions on it.

For a muffin (or two minis) and a hearty bowl of chili:

6.3 g fat
33.2 g carbs
7g fiber
22 g protein

Pull up to Wendys...ROFLMAO!  Mmmmm...I was just thinking about cornbread too.  This one sounds like a keeper!

LIGHTBULB!!! Shari you may have invented a way for me to make better for you cornbread stuffing for Thanksgiving.  I love you!!!

Gurrrrrrlthang--- I LURVE me some cornbread!

My sister friends tease me and say that trait came with my ghetto bootay as a twofer-- which I miraculously have kept when the rest of me sank.  The lady who cleans my room at school always says, "Thank goodness you keep yo' bootay, Miss Shari! Praise the lord! Your daddy a black man?"

Oh My Goodnss..
You Northerners know about cornbread? MY MY!! Not to mention cornbread stuffing...of course the southern term is dressing!! BTW--it is always better cooked in a cast iron skillet!! Mine is 26 years old..( gtot it at my first wedding shower)
I make the best, according to my children. They have to say that, I am the MOM!!

I save my leftover cornbread in freezer bags until I have enough to make dressing. Then I boil 3 eggs, dice one granny smith apple, dice an onion, dice 3 stalks of celery, add poultry seasoning and sage to taste, pour in 1 can of chicken broher. Mix it all up ( by hand of course) and bake it until it is golden brown!! NOM NOM!!

Giiiiirl, don't get to talking about cornbread in cast iron skillets.  I am making some tonight to go with my crockpot chili.  Your recipe sounds sooooo good. 

Now if you're a true Southern gal I know you know about sweet potato pie.  I am experimenting with a protein enhanced low(er) carb sweet potato pie this week.  I'll let you all know how it goes.

Don't even get me started on sweet potato pie, pecan pie ( pronounced PEE CAN) , Chix and dumplings..LAWD..I may have to make a mess of cheesy grits tonight!! Last night we had pintos, ( cooked from dry, hamhock added) Turnip greens, and cornbread!! NOMMY!!
Oh, what about buckeye candy? YUM!!

Have you tried Culver's chili?  I thought I died and went to heaven.  Much better than Wendy's,
