Topic: My go to protein drink as a treat!

This might not suit many of you, but "occasionally" I like a hot chocolate or some similar concoction before bed.  This has worked well for me and it is not too far out of line!

1 - Carnation instant breakfast chocolate (no sugar added) packet

1 cup of skim milk

1/2 capful of Miralax (optional) but I take a 1/2 capful a day in a variety of ways :-).  This just happens to be one of them.

1 tablespoon Crème de Menthe liquor (again optional, but ooohhhh so good!)

This provides me with 13 grams of protein, as well as keeping me regular!  The mint flavoring just puts it a bit over the top.  I'm sure you could use non-alcoholic flavoring and get the same effect.

This is an inviting warm drink in the evening . . . especially on a chilly night.

Donna,

I am also a single and while I haven't had surgery YET, looking forward to it sometime after the first of the year. Yes, you can freeze in mason jars. I use the 4 oz jars for everything!! I made sugar free jello the other day and it said there were 8 servings in the package as made - I made 11 servings in the little jars - so I saved a few calories! Yay. You can microwave the jars as long as you remove the lid and rings. One sort of yummy meal I make in mason jars (and freeze) is a meatball with marinara sauce and parmesan cheese. Not sure if that equals the amount of protein needed in a meal but works great with a salad or other side dish of veggies.

I tend to stay away from anything plastic that will go in the microwave so keep that in mind when choosing your containers.

I also make things like meat loaf in muffin cups and freeze them individually. I have not tried them in mason jars - might work but I find it just as easy to make in the muffin cups - I use a silicon muffin "pan".

Topic: Buffalo Ranch Chicken

Here's my recipe for buffalo ranch chicken.

Materials:

Preferred Chicken (I've used both wings and breasts)

Franks Red Hot Buffalo Sauce (or whatever kind you like)

2 Buttermilk Ranch seasoning packets

Preferred hot sauce (Not needed, but I like em spicy)

 

Directions:

Wisk buffalo sauce, one ranch packet, and desired hot sauce in big bowl. Dredge chicken in bowl and let set for 30 minutes to 1 hour (I imagine overnight is best but that is a level of preparedness I do not have). Spray baking sheet with non-stick spray (I use the olive oil one). Lay chicken on sheet and spread leftover sauce on chicken. Take another ranch packet and sprinkle seasoning on top of chicken (doesn't need too much, just enough to give it that tangy ranch taste. Bake at 375 for 1 hour. Enjoy!

Best part is the sauce calories are at a minimum. The only thing this recipe has is maybe an elevated sodium count, but I need extra so yeepee!

Topic: Breakfast Ideas?

I have been on the Supervised Weight Loss diet since 8/5.  In the beginning I ate scrambled eggs and omelets for breakfast every day.  To say the least, I got burnt out.  

I spoke to my dietitian about my breakfast problem. She gave me a recipe to to try, individual egg fritatas.  They were just okay, still tasted like egg (duh).  So I turned to my Premier Protein shakes for breakfast.  

I can't have any white carbs so cereals of any kind are out.  Does anyone have a special breakfast recipe that can lift me out of my breakfast funk?  I only have 22 days until my RNY.  I prefer not to continue drinking my PP shakes during my remaining time since I will HAVE to be on shakes after surgery.

Proti-Diet sells a liquid to add to water that will add 15g protein.  Tropical is a really good flavor and price is standard all over.  Check Amazon for it.  Easy way to add water and protein.

My 1st experience of cooking and eating spaghetti squash was in August.  I made "spaghetti" with meatsauce.  It was okay.

My 2nd experencing with spaghetti squash was this Spaghetti Squash Casserole.  I was awesome!  My husband even tried it later that night as a snack.  He LOVED it.  I have prepared it for dinner (at my husband's request) 2 more times.  This dish is definitely our favorite meal.  BTW, neither of us likes squash, so we just don't discuss that this meal is made with squash...LOL!!

A close friend recently encouraged me to try spaghetti squash, and even gave me tips on how to cook it.  For the first time in my life, I tried it and LOVED it.  I'm going to try your casserole.  Thanks for sharing it!
