Your favorite part of the chicken boneless.
Your favorite fresh or canned vegetables.
I use both canned & fresh.
Dump everything in a pot salt & pepper to taste.
Everything in a big pot. It grows really fast.
Add water or broth to cover everything.
Leave on stove over night on low. Or use a crockpot
my favorite Thanksgiving recipe isn't really a recipe. It is my Mamma's Cornbread Dressing. Thankfully I had watched and help her make it for many years. This will be the first Thanksgiving without her.
Make a large cast iron skillet of cornbread with onion. Let it cool. Crumble the cornbread into a large mixing bowl/pan. Add a bag or 2 of Pepperidge Farms Cornbread dressing mix. Add about a 1/2 dozen hard boiled eggs, chopped. Add chopped giblets if you like them. When your turkey has finished cooking, add the drippings from the pan to the dressing mix. Add enough chicken stock to make the dressing REALLY soupy. I test mine by patting the top. If liquid pools just a little bit, it's "wet" enough. Put in baking dish and bake @ 400 deg. until the top is brown and dry. Serve with gravy, even though you really do not need it.

My favorite Thanskgiving recipe
Quinoa Stuffed Sweet Potatoes
Serves 8
What you'll need:
4 sweet potatoes
1 cup quinoa
2 cups vegetable broth
1 tbsp. butter substitute like Earth Balance
1 tbsp. olive oil
1 small onion, diced
2 cups kale, broken into 1 inch pieces
1/2 cup toasted slivered almonds
1/4 cup (plus) dried cranberries
salt and pepper
What you'll do:
Bake the sweet potatoes in a 350 degree oven for 1 hours or until fork tender. While they are cooking, make your filling. Cook the quinoa in the vegetable broth. And while that is cooking, saute the onion in the butter and olive oil with a pinch of salt until soft. Add in the kale, almonds, and cranberries and saute until the kale is soft, about 3 minutes. Add the finished quinoa to the frying pan and mix together. Original recipe calls for splitting the sweet potatoes in half. I cur each potatoe in fourths scoop out some of the flesh and fill with quinoa mix. Makes a great side dish for the Turkey.

Chicken breast stuffed with asparagus and cheddar cheese, wrapped in turkey bacon. Moist, juicy and delicious.
One of the things I learned in support group is that I needed to stop thinking in terms of "breakfast foods", "lunch foods", and "dinner foods". I now look for protein to eat and don't really care what kind of food it is. My first meal may be ham and cheese or chicken or anything that gives me a good good amount of protein for the meal. Yep.... even tuna salad has made it as the first meal :)
That's is awesome. I will give that a try.

I make an easier version of this - 1 slice provolone (I use Sargento Ultra Thin), placed on parchment paper and microwaved for 30ish seconds until it just starts to brown. Pull out of the microwave and immediately pull the edges of the parchment paper upwards to form the shell. Hold for 10-15 seconds as the shell firms. Voila!
