I got mine not quite 2 weeks ago ... I also love a good gadget. I have been running it through it's paces...

Yogurt - perfect (I heated my milk outside of the instapot and just added the milk starter mixture to the Instapot and pressed the button)

Frozen chicken in marinade - threw it in Instapot with 1 cup liquid. Cooked perfectly, took chicken out and then put saute on, and thickened sauce.

Whole chicken for chicken and soup...partially frozen -

Black Bean Soup - used saute function to cook onions, garlic and peppers. I did soak the beans overnight although that is optional. I cooked for 25 minutes, came out very soft. Could have probably done 20 minutes as they were pre-soaked. came out perfect.

Did a buffalo shredded chicken. 1 cup total - chicken broth and Buffalo sauce with 1 packet ranch dressing mix mixed in. 15 minute cook. quick release, shredded the chicken removed at least 1/2 the liquid and then added 4oz (half brick) Cream cheese. Added broth/sauce back in as needed. Delicious.

Tried to do 2 baked potatoes but they weren't quite soft enough.

As I live alone and have no one to share things with, I got this idea for a mug cake somewhere along the way.

Chocolate Mug cake

1/4c Carbquik   (Like low carb Bisquick - buy on Netrition.com or Amazon)

2 Tbsp Cocoa Powder (I use Hershey's Dark)

!/4 Cup Torani Or DaVinci SF Syrup-- flavor of choice

Mix together and add enough water or milk to make a thick pancake batter consistency.- About 2 TBSP

 

Microwave one minute and check. Keep microwaving in 15 second intervals until cooked. I like to leave the center a little wet looking. My microwave takes about 1:45 seconds. Eat!

I have one, well I have two - we just recently updated to their newer version from the one they had out a few years ago that was smaller and had less settings. I personally LOVE it. It is one of the few things that stays out on our counter because we use it so often. It can be used as a crock pot but we mainly use the pressure cooker setting. It also comes in really handy at the holidays/potlucks to keep food warm.

I too only eat fish. I have a great blog that is for vegetarians post-surgery. Tonight I made Morning Star Farms Crumblers Eggplant Pastaless Pasta Bake! Its awesome!!!! Good luck!

i just made my version of west african peanut stew . . . . .

brown 2 lbs ground beef . . . place in colander and rinse with warm water to remove fat globs.  Throw into pot.  Add a bag of butter nut squash cubes, large box of mushrooms, coarsely chopped zucchini (2) and yellow squash (3), add water to cover, 4 beef bouillon cubes, generous squeeze of ginger and garlic in a tube, 2 tablespoons of agave (usually gets tiny sweetness from sweet potatoes), a can of diced tomatoes, sriracha sauce to taste, and in lieu of peanut butter . . . 3 heaping tablespoons of pb2 . . . simmer until cooked and thickened.

was going to make a ground beef and cabbage stew but the canada geese were hungry, so i gave them raw cabbage and cracked corn(ran out to the feed store) and had to rethink dinner :)
