Best Ever Tuna Noodle Casserole


Ingredients

* 1 (8 ounce) package wide egg noodles
* 2 tablespoons butter
* 2 tablespoons all-purpose flour
* 1 teaspoon salt (optional)
* 1 cup milk
* 1 cup shredded sharp Cheddar cheese
* 1 (6 ounce) can tuna, drained
* 1 (15 ounce) can peas, drained

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Coat a 2 quart casserole dish with cooking spray.

2. In a large pot of salted water, boil noodles until al dente. Drain well.

3. In a medium saucepan, combine flour, butter, and salt. Stir until butter is melted and ingredients are combined evenly. Add milk, and whis****il the sauce thickens (usually it is at the proper consistency by the time it begins to boil). Add cheese to mixture, and whis****il cheese is melted and mixture is well blended. Stir in tuna, peas, and noodles. Spread evenly in prepared dish.

4. Bake in preheated oven for 30 minutes.

i have a craving for some tuna noodle casserole, but need some  help reworking the recipe to make it more WLS friendly.  I figure the tuna is fine as is.  The problem is the noodles and the sauce.  I'm thinking about substituting very thinly sliced yellow or green squash for the noodles.  My husband doesn't think that sounds very good.  I'm not sure.  Are there any noodles that are low in carbs or noodle alternative anyone can think of?  I also have no idea of what to do about the sauce.  I used to use cream of celery or broccoli and cheese soup, but I don't think those are the best options nutritionally now.  Thoughts or suggestions?  Thanks!

Topic: Faux Enchiladas - I call them "Skinchiladas"

This is a recipe my husband created for tortilla free enchiladas. It is delicious and got me through the puree stage and now through the soft stage :) So delicious!! Tastes like genuine mexican food.

SKINCHILADAS


Ingredients
? 1 can of green enchilada sauce
? 1 small and 1 big can of green chilis or 3 small cans
? 1.5-2lbs shredded chicken
? 2 tablespoons of minced garlic
? 1 bag of reduced fat Sargento Mexican cheese
? 2 bell peppers
? 1 onion


Instructions
1. Preheat the oven to 375 degrees
2. Spice chicken with chili powder, garlic salt and nature seasoning
3. Cook at 375 degrees for 30 minutes
4. Take chicken out, but leave the oven on
5. Chop and dice onion then sauté with a little olive oil, add the minced garlic when the onions are almost done
6. Chop and dice bell peppers and sauté the same way
7. Shred chicken (use two forks to pull it apart) and put in the casserole dish with the cooked onions, bell peppers, and add the cans of green chilis
8. Add half of the bag of cheese
9. Add ¼ of a can of Enchilada sauce and mix contents
10.Pour over more enchilada sauce, until half of the sauce in the can is remaining
11.Sprinkle remaining cheese on top
12.Cover the dish with aluminum foil
13.Cook for 30 minutes at 375 degrees
14.Remove the foil and cook for an additional 25 minutes

15.Enjoy and think about how you can repay me for introducing you to this amazing food!

Topic: Buffalo wings ---- sorta

Don't know why but I had a craving for buffalo wings so I searched Pinterest to find something to make with ground chicken. I took ground chicken, buffalo sauce, some breadcrumbs, and an egg. I mixed them all together to make meatballs and baked them in the oven for about 30 minutes at 350 degrees. Then basted them with a little more sauce and melted margarine (all small amounts) and cooked them 10 more minutes. Of course I could only eat one meatball but they were so yummy and satisfying.

Sorry for the delayed reply.  I was denied for my conversion surgery, and was only able to get my band out.  It was extremely depressing and I sort of just stepped away.  My husband had an accident and we met our out of pocket max for the year (last year).  It was the only reason I was able to have the surgery at all...it was free.  Now, I'll have to save up about $4000 (after insurance) to have another wls.  It doesn't seem likely, since we have almost $10,000 in med bills from last year.  However, I am trying.  Even if I have to put it off until next year, I need all the information I can get. 

I really appreciate your link.  The information on labs is of particular interest to me because I've had some health problems and I don't think I was tested for all the things I should be tested for, or that they used the rbc rather than serum.  Some were done with rbc (like mag, which was very low). 

Anyway, I will definitely check out your blog.  I could have worded my question better, but what I was looking for was a list of foods I will not likely be able to tolerate, or a list of foods that are well tolerated.  I don't eat processed foods, so that knocks most of the foods I shouldn't have off of the list, but also reduces the food I can eat, significantly.  Meat, veggies, fruit and sometimes quinoa, in that order is what I eat.  After having the band, and vomiting daily for 8 years, even with a complete unfill, my body apparently stores everything.  No I wasn't eating too fast, or too much.  It was apparently placed wrong, I had tons of scar tissue and with bad genes, and daily vomiting, my teeth suffered.  I'm now missing several, which reduces my abilty to properly masticate food, resulting in...more vomiting.  So, what I'm working on, is getting a list of food that people eat and tolerate, or don't tolerate, so I can determine if having the surgery is even an option without spending thousands of dollars on dental implants.  Make sense?  I obviously want implants, but I need to get to a safe weight and I'll worry about implants later (I can save $4000 before $20.000). 

 

Thanks again for your information.  Like I said, I was denied, but I did get my band out and haven't vomited once.  Still only consume about 800 calories a day, or I gain... quickly, and any less and I'll feel like passing out or not be able to function (sort of stare off into space).

4 Ingredients

  • 0.25 Cup Raw, Old Fashioned Oatmeal- Raw 1/4 Cup
  • 0.50 cup, Skim Milk
  • 2 tbsp, DaVinci Zero Calorie Caramel Syrup
  • 14 g (3 tbsp), Quest Protein Powder, Salted Caramel

Add protein powder last 

Calories: 165  Fat: 2g  Sodium: 228mg Carbs: 18g  Protein: 20g

I make a similar recipe, but I used ground turkey and mushrooms instead of oats.  It's slightly more crumbly, but the mushrooms make it taste just as meaty!

I follow a ketogenic diet post-op. I also have a diagnosis of binge eating disorder. Feel free to ask me about either!
