I can digest rice with no problems but have been dying for fried rice!  I had surgery in Dec. 09 but have not tried chinese food yet (don't really want to try it b/c I know I won't have a problem with it and I don't want to get hooked again lol) but would love some fried rice.  I've heard a lot of great stuff about the quinoa so I'm excited to find a great dish to finally try it in!!  Do you have any other recipes for quinoa? I've never had it so I have no idea how to prepare it!  I actually just said to my mom that I'm going to give her a list of stuff to get at the store so I can make this when my tonsils heal LOL

Omg...it was so much better than I expected..it tasted very much like the real thing..I cannot digest regular rice that well still so this was a great alternative!

Wow - this sounds wicked good!! Thanks for sharing!! I just had my tonsils out so in a week this will be perfect to eat ... nice and mushy!! OMG my mouth is watering!!

I made some yummy ones the other day..I used the regular egg roll wrappers but I sprayed them with olive oil and baked them..of course they don't puff up exactly like they do when you fry them but they are similar and they taste really good..I made mine with sliced chicken breast, sauteed mushrooms and onion and a lil mozarella cheese...they were very good

I made this last night for my family and it was a huge hit..

1 cup quinoa
2 cups low sodium chicken broth
1/4 cup frozen peas
1/4 cup frozen corn
1 tsp soy sauce
1/4 cup green onions
2 eggs (I used egg beaters)
1 tsp soy sauce
1 tsp ketchup
1 tsp mustard

add quinoa and broth to sauce pan...bring to a boil..reduce temp to low, cover and let simmer 10 mins...fluff quinoa with a fork..add peas, corn, soy sauce, and green onions....scramble eggs in a separate pan....add eggs to quinoa mixture...mix 1 tsp soy sauce, ketchup and mustard together and then add to quinoa mixture...serve hot..it's delish!

I served it for dinner last night but today I heated some up for lunch threw a few shrimp in and it was also very good..

4 Tablespoon flax meal
1/2 teaspoon baking powder
1 packet splenda packet
1 teaspoon cinnamon
1 large egg
1 teaspoon butter


Put the dry ingredients in a coffee mug. Or a bowl for a different shape.

Stir.

Then add the egg and the butter. Mix.

Microwave 1 minute (or more). Take out. slice, butter, eat. Set mug to soak immediately.

Calories 217, Carbs 15 (1.5 net carbs), Fat 16, Protein 12

.........................I halved the ingredients to make it a single serve.
