Topic: Cauliflower Tortillas

I read a bunch of different recipes and comments for cauliflower tortilla. The recipes are all over the place on how the cauli should be prepared, what ingredients to add, how to cook it, season it, etc. I took them all into consideration and ended up trying to make the simplest, most basic version, and if it didnt turn out, i'd try something else.

I think they were great. And i will definitely make them again, and i can see how they can be quite versatile.

I made three, and froze two to see how they keep. when i pull them out, i will update!

Cauliflower tortillas:

  1. 1 cup riced cauliflower, uncooked
  2. 1 egg
  3. salt and pepper
  • Combine all ingredients in a bowl
  • separate mixture in thirds, and shape into patties/disks on a parchment lined cookie sheet
  • bake for about 15 minutes at 375, flipping halfway through
  • Before serving, add a bit of oil in a pan, and fry tortillas briefly to give them a bit of crunch and colour.

NOTE:

I made three with the above, but i think i might try just two next time, so they would be a bit bigger. I ended up eating it more tostada style than taco, but i think if its bigger, i probably would not be able to fini**** plus the filling.

Some recipes steam the cauliflower, some cook and ma**** I might try that too, to see how thin i can get them and have it still hold, but it isn't necessary. These were great as is.

I love the marinara sauce too. I also add very little sugar to give it little sweetness and not make it too sour.

Topic: RE: Tea Latte - Low Carb Style

I make a chai tea latte every morning and often in the afternoon to keep working too .

I keep a pot on my stove with black tea bags filtered water ginger slices and maybe a tea bag or two of chai flavored tea . This brews up super strong but I usually add boxed chai tea to my cup too ( it's like a shot of non fattening espresso:) ) .

I use fat free powdered milk and truvia to sweeten or sugar free Torani syrup when I remember to buy it . Almond Silk lite works well too .

Yum, sounds good!  We usually put tomato sauce in our shepherd's pie ground beef; I wonder if that would make it moist enough without the creamed corn... will have to give it a try.

I can't wait to try this!  I'm having my surgery at the end of March but need to start training up my friends and family to handle the foods I'll be eating :)  I have a big group over for dinner every Thursday and this will be on our menu for sure! I'll be using venison, but I usually add a little olive oil while it's cooking to act as the fat needed to brown it :)

what are the stats? I have not eaten banana's yet but would probably swap out to egg whites to reduce calories.

Yeah we use mostly whole birds too. I think it would adapt well.

also, I froze the leftovers, and for Super Bowl blended it with cream cheese, more hot sauce and some cheddar cheese, then baked it and served as a hot dip with veggies!

This looks amazing! I have whole chicken (frozen whole chicken) to work with because we raise our own birds, so I'm always leery of recipes that use chicken breasts, but this looks easy to adapt!
