 I just put the dry mix in a bowl and add one can od diet pepsi or any other diet soda and mix..Bake as usual..Inserting a toothpick to make sure it is cooked all the way thru.. You can also use a 15 oz. can of pumpkin instead of the soda and bake the same way..."Lucky"

Topic: Liquid diet suggestions???
i'm one week into a 4 week liquid diet (2 pre surgery and 2 post surgery). So far, I'm doing well, although I can't believe how hard it is for me to consume AT LEAST 600 Calories a day!!! I can tell I'm very quickly going to come to despise the few options I currently have for Protein Shakes. (Chicken, Beef, PB2-peanut butter and Ham) I KNOW there must be something more. Can anyone give me some suggestions?

There is a product by Bell Plantation, Inc., called PB2. It is DEFATTED peanut butter! It comes as a powder, about the consistency of powdered sugar. NUTRITION INFO: 2TBSP/45Cal/5Prot /1.5Fats/5Carbs. It is carried in some groceries (especially if they cater to WEIGHT WATCHERs), weight loss centers (in St Louis area, it's carried at POUNDS AND INCHES AWEIGH, in Chesterfield), AND at the website: http://www.bellplantation.com/

My mother puts it in sugar free Cool Whip and uses it for icing. It is EXCELLENT. Hope you're able to find and use it.

HOW do you make cake from Diet Pepsi? I thought you couldn't bake with Aspertame?

 Recipe for cottage cheese pancakes...

1 cup flour
1/2 tsp. baking soda
1/4 tsp. salt
2 T. Sugar ( or splenda)
4 eggs ( I used 3 and it was fine)
1 cup low fat cottage cheese
2 T. Canola oil ( or whatever kind you like)

Beat the eggs with a spoon, then put in the rest of the ingredients...I fixed these last night, and they were really good...Make sure you don't get your skillet/griddle real hot because they will burn fast cuz of the cottage cheese in them..

Topic: Mexican Meatball Soup
This is one of my Lazy day Crockpot favorites and gets a lot of help from Trader Joe's. Of course you can make everything from scratch or substitute any item for another. I never make this recipe the same way. I always vary it up.

4 cups beef stock.
1 28-oz can diced tomatoes
1 jar salsa 
1 Bag meatballs (I like Trader Joe's, frozen ****tail-sized beef meatballs)*
2 Cups corn, (I like Trader Joe's frozen roasted corn)*
4 carrots, diced
1 onion diced
2 cups diced potatoes (I often use a sweet potato)
1 tsp Cumin
1 tsp Garlic powder (or 2 cloves fresh garlic, minced or pressed)
1 tsp salt
1/2 tsp pepper
* Optional* Cooked spaghettini noodles. Break up and cook separately and add only when serving.

Place all items in crockpot and cook on high for 4 hours or medium for 6-8 hrs.

* Thaw or microwave frozen items first
You can substitute chicken, ground beef or turkey and of course add or subtract whatever vegetables you like.

Put some refried beans in a bowl.  Microwave until hot.  Add some shredded lf cheddar.  You can microwave a little longer to warm/melt the cheese.  This was one of my favorites.

If you are allowed "soft foods"  my other favorite at that time was frozen 5/8 oz  to 1 oz meatballs with some marinara sauce microwaved. 

These are both easy to take to work if you have a microwave.

Other ideas:
tuna or chicken salad made with hard boiled egg whites but no celery.  I used celery and onion
         powders instead to get the flavor.
lf cottage cheese with applesauce  (cottage cheese is high in protein)
Buy a small Wendy's chili and put it in the blender if you still need pureed.  Otherwise it it pretty
        easy on the pouch.
